Pecan Surprise Cookies

Ingredients (use vegan versions):

    1 cup margarine, softened
    ¾ - 1 cup sugar
    ¾ - 1 cup firmly packed brown sugar
    1/4 cup unsweetened applesauce
    1 cup oil
    1 teaspoon vanilla extract
    3 ½ cups all-purpose flour
    1 teaspoon baking soda
    ½ teaspoon salt
    1 cup uncooked oats
    1 cup crushed Wheaties (cereal)
    ½ cup coconut
    ½ cup finely shopped pecans

Directions:

Preheat oven to 325 degrees.

Cream margarine in a large bowl.  Add vegan sugars and applesauce.  Beat well.  Stir in oil and vanilla.

Combine flour, soda, salt, and oats in a large bowl.  Add Wheaties, coconut, and pecans.  Blend well.

Add dry mixture to butter mixture.  Mix well.  Shape into 1-inch balls.  Place on an ungreased baking sheet and mash lightly twice (once lengthwise, once widthwise) with a fork.

Bake for 15 minutes.

Serves: 10 dozen

Im not sure what the surprise is, but it's probably how delicious these are Wink

I was a little freaked out about the cup of oil and the cup of margarine, so i replaced the oil and applesauce with mashed banana.. It makes these really fruity and REALLY nice Smiley

Also, I cant get ahold of wheaties where i am, so I used a cereal called wheetabix that is like crushed wheaties formed into little bars, sorta similar to what shredded wheat is like.. it worked just fine.. I took a bite of a cookie and then took it to my husband to taste.. i said here, take a bite of this and taste it.. he never gave me back my cookie! haha.. now it lives in his stomach Wink

These were really good, but i was worried about the amount of fat, i used less oil. I also used vanilla soygurt instead of applesauce. but they turned out amazing!
This recipe is a keeper!
