Great Key Lime Pie

Ingredients (use vegan versions):

    1 pkg Mori-Nu silken firm tofu
    8 oz soy cream cheese
    1/2 cup key lime juice (I use Floribbean brand)
    2 teaspoon grated lime rind
    2 pkgs Mori-Nu Mates vanilla pudding mix
    1 tablespoon liquid sweetener (to taste)
    1 prepared 9 or so pastry or graham pie crust

Directions:

Drain any excess water from the tofu.  Blend tofu and lime juice in a processor (may be too stiff for your blender) until creamy and smooth.  Add the rest of the ingredients, except crust (!), and blend again until smooth.  Pour the mixture into the crust and chill 2-3 hours or until firm.

Sets up very firm.  Makes a great pudding or little tartlet filling for fancy desserts.

Serves: 6-8

Preparation time: 20 min

This is the best Key Lime Pie I've ever tasted in my life!  I fooled everyone.  My husband couldnt believe it was made with tofu.  My meat eating father wants me to make nothing but this pie.  Thanks for such a great recipe.

I had always disliked key lime pie as a child until my first experience at a vegetarian resteraunt with a tofu key lime pie.  This went beyond my first experience.  I used 3 tablespoons of maple syrup because I was unsure of what liquid sweetener was and it worked wonderfully.  Thank you so much for passing this on.

Absolutely the best key lime pie I've ever tasted--and so fast!  I just wowed a dinner party of 20 with three of these fabulous pies!  By the way, Mori-Nu Mates Vanilla doesn't have honey in it--at least not the ones I got!

This pie turned out really good, howe'ver, I wasn't able to find key lime sauce so I settled on sweetened lime juice. The only problem I had was that it wasn't really firm. Kinda hard to take an individual slice but that may be because I used lime juice. But it tastes great!

This pie is delicious and fooled my whole family!  I find the consistency works best in a blender but if you have a food processor adding a scoop of cool whip or another non dairy whipped cream makes it a little more creamy.

Holy moly, this is some good stuff. People BEG me to make this...noveggies and veggies. I was bringing it to a family function and it was a total hit, then I brought another one. The next time I didn't, and my relatives were actually mad at me! Smiley I had no idea they liked it THAT much. VERY EASY to make.

Willwolf, I think key limes are just a bit sweeter than regular limes. Make it with regular lime juice, and then taste it to make sure its not too tart. If so, adjust your sweetener to your tastes. Good luck!

My store was out of the vanilla mori-nu mates, so I got the lemon creme kind instead, and substituted lemon juice and peel for the limes, and upped the sweetener a little. It was great! Hopefully I'll get to try the actual lime pie soon!

Yummy in my tummy and in my non-vegan guests tummies as well.  I split real lime juice and roses sweet lime juice instead of key lime juice and it still tasted great!  For liquid sweetner i used rice syrup, and silken tofu instead of firm.  It probably turns out better with firmer tofu, but it still stayed reasonably together.  I recommend this to anyone who wants to prove that desserts can be great without using animals! On that note, I'm going to go eat a piece right now...

My sister, brother and I are lactose intolerant and haven't had key lime pie for years.  It was a favorite of ours as kids.  I made this for my sister as a surprise and she thought she had died and gone to heaven.  I can't wait to make it for my brother. THANKS for the GREAT recipe!!

Simply amazing.  I fed it to a bunch of carnivore key lime pie enthusiasts tonight, and they all went scrambling back for seconds.  After looking at the recipe, I realized I even left out 1 pkg of the pudding mix, and it still turned out fantastic.  Thanks!

This pie is amazing!!! and really fast to make.  I used fresh (regular) lime juice = 2 limes, 1 TBS maple syrup as the sweetener, and only one pudding packet.  It seems like two would overpower the lime flavor.  It wasn't all that firm though.  Next time i may try adding some vanilla flavored agar powder.

Delicious!!  I've never had key lime pie before, but this turned out wonderfully.  It tastes like lime cheesecake.  I followed the recipe exactly except I added just a bit more maple syrup and regular lime juice.  I had no problems with the pie setting up--mine was the perfect texture and firmness.

Imakebeads4--Beware that when you make the banana cream pie version, the pie will turn a brownish color.  I followed the recipe on the Mori-Nu vanilla pudding mix, and although it was delicious, the color is not too appealing to the eye.

Ok I have to go with everyone else here, this was the most amazing pie recipe ever! So easy! I have made it three times so far, the first time was for a party of totally nonveggies. Every last crumb was gone. The second time was for my all nonveggie coworkers, but this time I made it with strawberry juice instead of Key Lime. Again amazing! If you juice the strawberries you can throw a little bit of the pulp in to turn it more pink. Also throw a few strawberry slices on top to look fancy. YUMMM! Anyone who is trying to go vegan and craving pie this is for you! I didn't even tell people, I pulled the tofu over their eyes. Hehe.

To Imakebeads4.  If you want to use bananas and don't want them to go brown, try this.  Put the bananas, unpeeled, in a bowl.  Pour boiling water over them so they're all covered.  After 5 minutes take them out (be careful not to burn your fingers, they're hot) and peel them immediately.  Leave to cool down, and use in recipe.  This works for me when I make banana salad or fruit salad.

to Crobins and anyone worried about getting the texture right in a food processor - I used to have this problem until I learned to let the tofu process for several minutes.  If you let the tofu process long enough it will turn silky smooth and a bit glossy.  Then its ready and the texture will be perfect.  You might have to scrape down the sides of your food processor once or twice at first to get all the little bits mixed in.  (Cool Whip isn't vegan, BTW.)

I made this recipe with lemon instead of lime because I couldnt find organic limes.  As I live in France, I didn't know exactly what the vanilla pudding was so I used lemon instant pudding from my natural product store but I had to boil it in a little soy milk first before blending it whith the other ingredients.  The filling didn't really set, though, so perhaps I should have used something else, but it was very nice anyway.  Also I made the graham crackers for the crust myself as you can't find those here.

The pie tastes fantastic!  Just one thing I will change next time is to use extra firm tofu.  Tofutti has changed their cream cheese to unhydrogenated and so it is a bit softer.  The filling was still a little too soft, but...the taste was superb.

Was skeptical about how the texture would compare to non-vegan key lime pie but after the second bite I was converted. Wasnt able to find mori-nu dessert mix so I substituted with alpro vanilla pudding mix just 1 1/2 individual pots. Also used Org. Lime cordial as the juice. One to share with the non-vegans.

I made this around Easter primarily for my husband who can't eat dairy.  I added cool whip to the recipe to lighten it up as was suggested by one reader.  I thought it was delicious, as did my mother and her friends (none of whom had any idea it was nondairy or that it had TOFU in it).  They took the leftovers home.  My husband, sister and brother-in-law were less thrilled, as the lime taste is quite pronounced.  I would recommend giving this a try, but don't be disappointed if not everyone asks for seconds.

Key Lime Pie is my absoulte favorite! But, I can't have any soy products, or I'll be six feet under...if you know what I mean. Do you know of anything I could use to substitute?  Gracias!

love it with key lime juice, and have also had really good luck substituting about 1/2 cup of papaya juice and topping the pie (or a sugar cookie crust) with fresh fruit.  like a fruit tart or fruit pizza.  people have raved--I actually like it better than cream cheese-based fillings because it isn't as heavy and doesn't leave a film in your mouth.

I've made this twice now for people who were mostly non-veg*n and its consistently received good reviews, and I've been asked for the recipe.  I'd say maybe 2-3 tablespoons of liquid sweetener unless you like your key lime pie pretty tart, though.

this pie was delishious. i subbed lemon for the lime ingredients & used lemon pudding packets...it was reminiscent of lemon curd almost. the pie set up very nicely even though i added more lemon juice than the recipe stated (around a 1/4 cup more). im going to try the key lime when this 1s gone (i must have eaten 1/4 of it in 1 sitting its so good). there are limitless possibilities on ways to alter the ingredients (somebody said strawberry juice or banana cream) & you'll always end up w/ something tasty.

WOW this stuff is AMAZING!  I am the WORST vegan chef, especially when it comes to desserts and this turned out perfect.  I didn't have any key lime juice, so I juiced 4 regular limes and added 1 tbs. maple syrup, as someone suggested earlier and then I added two more tbs. of maple syrup later on when you put all the ingredients together.  I also added a few pieces of fresh mint and it gave it a great flavor.  I cannot wait to make this for my non veg friends and fool them!!  My boyfriend, who doesn't even like key lime pie, loved this stuff!  My crust had been in the freezer for too long and tasted gross, so we just left the filling in a bowl and eat it as a pudding...it's so good.  i can't wait to make it with a graham crust, yum!  ok, enough raving, really, this stuff is just delicious!!   Grin

I made this for the first time today and it was so delicious!!! Wow. We have had a key lime pie at a local vegan restaurant, but this one is so much better. Will make this again for sure. Thanks!!! Smiley

I made this for Thanksgiving and it was GREAT! I am not vegan, so I used organic cream cheese instead of the soy cream cheese. I also used maple syrup for the liquid sweetener. It was really awesome! No one knew it was vegan and they were all very impressed. I sliced the leftove key limes and used them to decorate the pie. I can't wait to make it again.

I used meyer lemons instead of key lime, and the flavor came out fantastic.  However, I accidentally bought silken soft tofu instead of firm, and used a different brand of pudding, so the pie came out kind of melty.  Oh well.  Next time I'll know better.  Thanks for sharing anyway.

I used Jell-O vanilla pudding mix instead (http://www.peta.org/accidentallyVegan/VeganShoppingQS-Baking.asp?Category=Baking), and it's delish!

Mine also seemed a bit pudding-y, so I added 1 t of agar to help it set nicely.
