Abagails Frozen Yoghurt

Ingredients (use vegan versions):

    very ripe fruit cut in tiny pieces, layed in a single layer and frozen over night
    (peaches, bananas and strawberries are nice.)
    soy milk
    maple syrup
    pinch salt

Directions:

Remove the frozen fruit pieces from the freezer and put them in the food processor.  Pulse chop them until they look like coarse sand.  Add a few tablespoons of soy milk and a drizzle of maple syrup and blend into smooth frozen yoghurt consistency.

If you're super cook, whip up some seven grain waffles and top with the frozen yoghurt and a drizzle of maple syrup.  If not, put yoghurt in a bowl and eat topped with granola or plain....

Its awesome to eat this for breakfast.  You feel like you're doing something wrong, but its just fruit!!

If you live in a place with an abundance of fresh fruit, like California, you'll make good use of this recipe, because produce is so cheap there.  You buy alot, and it starts to over ripen before you can finish it all.

Prepared frozen bags of fruit in the grocery store work also, although fruit you ripen yourself will be sweeter and require less maple vegan sugar.  I suggest frozen blueberries if you want to buy pre-frozen.
