Wacky Cake

Ingredients (use vegan versions):

    1 1/2 cup whole wheat flour
    1 1/2 cup unbleached flour
    1/2 cup

    carob powder
    1 teaspoon salt
    1 teaspoon baking soda
    1 cup raw sugar or syrup
    1/3 cup unsweetend apple sauce
    1/3 cup canola oil
    2 tsp.vanilla
    2 teaspoon lemon juice
    2 cup cold water

Directions:

Mix ingredients in large bowl until well blended.

Bake in any pan at 350F for 30 to 40 minutes.  (makes good cupcakes)

Serves: lots

Preparation time: 15min


This is a great quick cake...Its really good heated up and I even spread some peanut butter on top....Everyone loved it!!!

The cake it simple to make, not too sweet, and stays together well!! The taste is pretty typical for vegan cakes.

i haven't made this version of this recipe, but wacky cake is like...  our family's birthday cake traditional recipe!  mine doesn't call for applesauce, but obviously that's healthier than the shortening it does call for.  weird!  i never knew anyone else who had had this before, at least by the same name!

i only get it once a year, boo hoo...  when i tried to make it one a whim a few weeks ago, it turned out terrible.  apparently only my mom has the true secret!
