Gingerbread Cookies

Ingredients (use vegan versions):

    4 tablespoons margarine
    1/2 cup raw sugar
    1 egg equivalent (powdered replacement, mix according to packet instructions)
    2 1/2 cups plain flour
    1 teaspoon bicarbonate of soda
    4 teaspoon ground ginger (I use around 6!!)
    1 teaspoon ground cloves
    2 teaspoon ground cinnamon
    2 teaspoon ground nutmeg
    3 tablespoons golden syrup

Directions:

Cream margarine and raw sugar, add egg replacement, mix.  Add flour, soda and spices, then golden syrup. Mix well ( if you find that the mixture is a little dry, add 1/2 a tablespoon more golden syrup).

Roll mixture into teaspoon sized balls (or bigger if you like!), flatten slightly and place on cookie tray.

Bake for 10 minutes in a moderate oven.

Yummy hot or cold!


This cookies dough came out a little dry, but that wasn't necessarily a bad thing, because I wanted a dough I could use cookie cutters with.  These were a bit spicier than I like, but my husband loves them.

these are pretty good cookies... its true, a bit strong.  they also don't seem to rise, and the dough was a bit flakey (had to add water to make them less crumby) but pretty good! ill make them again!

ok, may be a dumb question, but what is golden syrup?

Golden syrup is sugar syrup in GB. I suppose its what US people call corn syrup.

Golden syrup can be substituted with mollases it is actually the same process but the sugar is not cooked for as long.

I followed this recipe and the dough came out REALLY dry. I think a wet ingredient needs to be added to this recipe to make it come out correctly.

Dough is much too dry, but if you add some soymilk it turns out perfectly.  Delicious.

Okay, so I tried the recipe... I was good, but needed more spice. Also it was moist enough to roll out, and I didn't have to use soymilk. All in all - nice cookies!  Tongue

I just made these and they're great! I cut down on the ginger by a tablespoon and used molasses instead of corn syrup. I rolled them out and cut them into gingerbread men-I gave them faces with gel food coloring and buttons with raisins and choc. chips. They're so cute and Christmas-y! LOL.  Grin But watch out, the dough was very dry, almost powdery so I added a little more than 1/4 cup rice milk, baked @ 350 for 10 mins and it was perfect.

I've never  ended up  with cookies like these  before, the ''dough'' IS powdery , there  is either too much flour in this recipe  or not  enough wet ingredients
even after  i added  the extra  moisture  to the  recipe  by adding  soy milk  and  adjusting the spices (adding more) , my cookies  came out tasting  like flour even if the batter did not taste like it at the time, thats why i thought it  would come out fine...the  sugar  content was  fine i thought,  because Ive  used that  much sugar in cookie recipes before  and  had  no problem with the taste, i think there  is just way too much flour..
I'm  not  going to bin the cookies  only  because i hate  wasting , thank the gods  i have green tea to drink them with... sorry i  don't mean this in a mean way , I'm just being honest.. Undecided  who ever  makes this recipe and  fallows it exactly  will fine out that they  will  have to tweak this recipe  quite a lot  to get it  just right...

(I'm normally positive on reviews but there's nothing positive about these cookies  Lips Sealed )
