Banana Pudding

Ingredients (use vegan versions):

    10.5 oz. Soft silken tofu
    1 med. Banana
    21/2 tablespoon arrowroot powder
    2 tablespoon Raw maple syrup
    2 teaspoon Pure vanilla
    3Tbs. Rice milk (soy milk)

Directions:

Put all ingredients into a blender and puree until smooth.  Then pour into a medium saucepan and cook on med heat, stirring constintly until mixture thickens.(about 3 minutes) pour into desert glasses and chill at least 3 hours before serving.

Serves: 4-6

Preparation time: 15minutes


This pudding is great. I put some shredded coconut and cinnamon on top.  Yummmmmm.

what is arrowroot powder?

Captain, You should be able to find arrowroot powder in the spice section.  Its a white fine powder, similar to cornstarch.  In some recipes, you can actually substitute cornstarch for arrowroot, same amount, but in others, it may not work.  The brand that I find usually has arrowroot at Wild Oats is The Spice Hunter.  Oh, arrowroot is a thickener; I forgot to say that!  Smiley

i was born and raised in canada, and i still live there, and i think this qualify me to say maple syrup, in no case, can be RAW. it's boiled sap from a maple tree. other wise, it would be a barely sweet watery thing that would make you sick. sorry !

Maybe she meant PURE maple syrup (as in, not the Aunt Jemima-style pancake syrup, which has nothing to do with the maple tree). Smiley
