Recipe submitted by My mom gave me this recipe HChaires@earthlink.net

No Bake Oatmeal Cookies

Ingredients (use vegan versions):

    2 cups sugar
    1/2 cup soy milk
    1/4 cup soy margarine
    2 tablespoon cocoa
    3 cups quick oats
    1 teaspoon vanilla
    3/4 cups chopped walnuts

Directions:

Combine vegan sugar, soy milk, margarine and cocoa in pan. Heat til boiling and boil for 2 minutes. Remove from heat and add oats, nuts and vanilla. Stir well. Drop by spoonfuls onto waxed paper. Will set up as they cool. Makes 30-40 cookies, depending on what size you make them.

My mom used to make these cookies and I've been looking for the recipe. Theyre delicious!

Wow! These tasted great AND were super easy- perfect for a college student with only a few things in her cupboard! I halved the recipe and only used 3/4 cup sugar and they turned out beautifully.  I will make them again the next time I get a craving for chocolate.

These were super easy - and being a college student, half way through making them I realized I had no oatmeal! I tossed the mix in powered sugar for a sweet snack, real tasty!

if you like eating sugar by itself these are for you! way too sweet for my liking. I used cranberries instead of nuts.

my mom would make these with peanutbutter in them and that is very yummers. when i make these with a simular kind of recipie i always add a nice scoop of peanutbutter! yumm!

i thought the recipe was a little too sweet, i had to add about a cup more soymilk and 2 cups quick oats. also i added 1/2 cup all natural unsalted crunchy peanut butter. it really helped alot.

oh goddess, what happened? my cookies became dusty piles of sweet oatmeal. so sad! tomorrow ill continue with my mission to make vegan versions of the gooey no-bakes of my childhood..

These were great! I only used 1 1/4 cup of sugar and forgot the vanilla and they were still tastey.

Yum!  I definitely used less sugar, about a cup, a tad less margarine, and added a tablespoon of peanut butter.  I also used regular oats instead of quick oats and it turned out fine.  It made 20 thick cookies, hooray!  Thanks for posting!

Yummy!  I modified by using a cup of sugar, 1/2 c of peanut butter and I added a few chocolate chips (maybe 1/4 cup?) because I think I didn't boil mine for quite long enough, and the consistency was a tad off.

i was in such a craving for chocolate and this recipe came along. i didn't have enough oats, which probably caused it to not stick together. But I ended up eating it by spoon anyways.... haha. probably not good if I am trying to get a flat tummy... BUT OH WELL! screw it. It was good! Smiley

 Smitten

These are amazing! I think it took me about ten minutes, from the time I started grabbing ingredients out of the pantry until the cookies were finished and being passed around. They're delicious. I read everyone's suggestions about lessening the amount of sugar, but I decided to try the recipe as it is first. I halved everything because I didn't want thirty cookies, so I used 1 cup of sugar. I think they came out fine that way. They are super sweet, but they're cookies!  Evil

Thanks for the recipe, I'm keeping this one.

Halved the recipe, it was very yummy with these changes: used chocolate flavoured soy milk, regular oats, and only 3/4 cup sugar.

omg! i tasted these this morning (healthy breakfast  Smiley) but they were amazing! i added chocolate chips to the oats, but they just melted, so they were really chocolately and for some reason, it tasted like there was coconut in it, weird, but my sis thought to too. they were awesome!
