A Special Oatmeal Cookie

Ingredients (use vegan versions):

    1 1/2 cup whole wheat pastry flour
    1 cup rolled oats
    1 1/2 tsp. baking powder
    1/4 tsp. salt
    1 tsp. cinnamon
    1/3 cup canola oil
    4 tsp. cornstarch mixed into 1/2 cup soy milk or water
    3/4 cup Sucanat (or any unrefined sugar)
    1 tsp. vanilla
    1/2 cup coconut
    3/4 cup vegan chocolate chips (optional)

Directions:

Mix canola oil, cornstarch mixture, Sucanat, vanilla, and coconut well in a good-sized bowl. In a seperate bowl, sift flour, cinnamon, salt, and baking powder together. Add oats to this mixture. Add the dry mixture to the wet one and mix well. Mix in chocolate chips.  Form the dough into small balls or patties on a greased cookie sheet. Bake at 350 degrees Farenheit for about 10 minutes, or until they are done when tested with a toothpick.

Serves: about 6

Preparation time: 20 minutes

I just made these cookies...they are absolutely incredible! I didn't make them with the coconut but they turned out wonderfully. This is a definate 5 star recipe. They are moist and chewy and the best vegan oatmeal cookie I have ever tried. This will be one of the cookies that I make for my holiday cookie baking. YUM!

I made these for my non-veg boyfriend who loves oatmeal cookies.  They were a huge success!  I used 1/2 chocolate chips and 1/2 raisins.  The cocunut is a nice addition.  Yummmm!

I just tried this recipe and it is the best! This recipe is very easy to make and the cookies are delicious!  They are very soft and chewey, and very sweet! (but not too much:) I highly recommend this recipe, I will definatly make these again-and again-and again!

These are delicious! I recommend flattening them out in patties instead of the typical mound, because they do not really flatten out as regular cookies do. They are very tasty & easy to make though. I skipped the coconut & chocolate chips .... I bet they'd be great with raisins, though.

I just made these cookies using arrowroot powder in place of the cornstarch and raisins instead of chocolate chips. They were absolutely excellent. My husband couldnt stop eating them. They were tender, full of flavor, and just sweet enough. Also, they weren't greasy like so many cookies can be. As others have said before, the coconut added a nice touch.I've already added this recipe to the regular rotation book.

mmm, mmm, mmm!  these cookies were great.  they were paler than other oatmeal cookies ive made,  but they were the best.  everyone loved them, by everyone i mean lots of non-vegans.  one friend told me, this is not a good vegan cookie, this is a good cookie.  peace.

I thought these cookies tasted like canola oil.  I think they would taste much better with melted Earth Balance instead.  Also, more cinnamon Smiley

I just made these last night and they turned out wonderful! I followed the recipe exactly, but didn't bother with the carob chips. They look a little pale, but they taste great! The coconut adds a nice touch. Even my anti-everything-vegan paren'ts said they were delicious.  Thanks for a great recipe Shocked)

This cookie baked into a great consistency.  I doubled the cinnamon and used Earth Balance instead of oil.  The sweetness was perfect.

These cookies were amazing:) I love the taste of the coconut. I have made them twice , the first time using the recommended amount of cinnamon, and then reducing the amount to 1/2 tsp. I found the cinnamon a little overpowering... They were perfect, I'll make these again and again. Thanx!

This is my favourite oatmeal cookie I have ever eaten. Its light so its not extremely filling and it had no margarine, so its not packed with fat. I love it so much, that I have not even bothered looking for another vegan oatmeal cookie. Thank you so so much Cheesy

I was a little disappointed with this recipe.  It was very yummy, but very crumbly and dry.  I am not able to use sugar, so I substituted with Stevia...is that why they turned out so dry?

Very good!  I made them with dairy-free margarine (1/4 c.) instead of oil, and raisins instead of chocolate chips.  I also used only 1/2 c. whole wheat flour, and the rest all purpose flour.  I didn't use coconut, so I added an extra 1/4 c. oats because the batter seemed too wet.  Next time I will add more spice--nutmeg, ground cloves, and more cinnamon--because they were a bit bland.  Maybe brown sugar would help too!  The consistency and texture are great though!  I agree with others to flatten them a little prior to baking.  I will definitely make these again (but with the aforementioned changes)!

nice.  i omitted the coconut, added a 1/2 cup bran and replaced the chocolate chips with raisins.  (we can handle a lot of fiber in my house...careful) i also added some ground cloves, nutmeg, and cayenne pepper just because i can't seem to make anything without some extra ka-pow.  they came out well, but sweet...maybe less Sucanat next time?  thanks for the recipe!  the cornstarch-in-water egg replacement is great.

This recipe was great!  Instead of canola oil, I used 1/3 of a cup plum puree (1 1/3 cup dried plums and 6 tablespoons of hot water to make plum puree).  I also used about 3/4 tablespoon of cinnamon (maybe a little bit more), cranberries instead of chocolate chips, and left out the coconut.  The cookies turned out great!  I'll most definitely be using this recipe again!

mmm these are very yummy!!  I made them with raisins, added a little extra cinnamon, used about 1/2 of sugar and used half oil and half unsweetened applesauce.  I'm definatly making these again!

i just made these with applesauce instead of the oil and i did use the coconut and chocolate chips...yum they taste really really good! but they didn't spread at all which made me kind of sad...otherwise good cookies.

I love these! I made the cookies about 5 minutes ago, using only 1/2 cup of sugar (my coconut shavings are sweetened and I used an all-purpose whole wheat & soy flour baking mix that had a little sugar in it), and they were definitely still sweet enough. The only thing I would change, and it may have to do with the flour I used, would be to up the cooking time to 15-17 minutes. They were much too soft to take out at 10, and they were still soft and chewy after about 18 minutes, just with a little golden touch around the edges. I also added walnuts, tasty!!

i made these cookies last night, and yeah, i agree about the cooking time! i took them out after 10 minutes and they were still pretty much uncooked. although i believed that they would harden after a few minutes of cooling, so i let them cool off. but they remained extremely sticky and chewy and rather uncooked batter -- which i ate anyway. it was all right, but next time i'll bake it for much longer. ooh, and can someone post pictures of their cookies? so i'll have an idea of how they're supposed to turn out like. mine was rather dark, instead of the very pale ones that others supposedly got.

I actually created an account just so that I could review these cookies. I followed the recipe (no extra additions/substitutions) and I did use choc. chips. These cookies were AMAZING. The combination of the coconut, chocolate, and cinnamon was absolutely delicious. The cooking time was just fine for me; they came out not too mushy but not too dark. If you like chocolate, I would definitely recommend making it with the chocolate chips; they blend nicely with the other ingredients without being overpowering. I will certainly be making this recipe again!

I also created an account to review this recipe.  I'm not a vegan or vegetarian, but my baby is allergic to milk protein and eggs, so if I want to keep breastfeeding her I need to cut out all dairy and eggs from my diet.  I am so glad this forum is here. 

I made these cookies tonight.  The only alteration I made was to use brown sugar instead of the called-for sweetener, and raisins instead of chocolate chips.  I had to cook them for 4 extra minutes, but they came out delicious.  Truly delicious.

Definitely be aware that if you use sweetened coconut, you might want to lessen the amount of other sweetener.  But you can taste the batter and adjust to taste.

I didn't have any coconut in the house, so I subbed in unsweetened dried blueberries.  I also used apple sauce for half of the oil.  My cooking time was about 15 minutes, and they were great!  Thanks for the recipe.

I hate to be the killjoy, but I didn't care for them. Don't get me wrong; they are not bad cookies per se, they just don't suit my taste. I'm the type of person who, if she's gonna eat a cookie, she wants it to be GOOD. I just found them a bit boring and bland, so I'll stick with my usual oatmeal cookie recipe. And for the record, I followed the recipe exactly. I gave it 3 stars since I didn't like them, but it could have just been my tastebuds.

We made up a large batch of these puppies. I used raisins and nuts instead of chocolate chips, and they came out quite stellar. I *will* be making these again and again. Thanks for not being lazy like those people who copy recipes straight out of crappy nonvegan cookbooks and say "use egg replacer."

These cookies are delicious!!  I made a few adjustments: I used spelt flour and arrowroot instead of cornstarch, and reduced the oil to an 1/8C and added peanut butter (I just scooped but about 1/2C) and added some raisins.  They were so incredible, it's hard to make a vegan cookie much better than this.  Also my friend doesn't even like raisins but he thought they were great with these cookies.  We both loved them.

thanks for a cookie that doesn't use margarine! i was looking forever for one. I made a couple modifications to your recipe and they turned out quite well...i replaced half a cup of the flour with a half-cup of cocoa, but the first batch weren't quite sweet enough so I added a few tablespoons of honey and some chopped dark chocolate. my friends loved them, so thanks for the recipe! Smiley

cornstarch, how clever! A very good cookie that rose well.

changes:
applesauce instead of oil, walnuts instead of chocolate chips

and I added a 1/2 tsp of flax meal just because I have a lot of it on hand and to add some omega's
