Pumpkin Pie Bars

Ingredients (use vegan versions):

    4 oz soft tofu
    1/2 mashed banana
    1 cup unsweetened applesauce
    1 cup granulated sugar
    2 cup unsweetened pumpkin
    2 cup unbleached all purpose flour
    1 tablespoon baking powder
    1 teaspoon baking soda
    1 tablespoon cinnamon
    1 teaspoon ground
    1 teaspoon cloves
    1 teaspoon ground nutmeg
    1 teaspoon ground allspice
    sugar for sprinkling

Directions:

Preheat oven 375 degrees.  Rub veggie oil or spray in 1 deep, 8 by 12 pan.

Blend tofu and banana in blender.  Mix tofu, applesause, pumpkin, sugar.  Blend in flour, baking powder, baking soda and spices.  Spread mixture evenly in pan.  Bake for 25 minutes.  Cool in refrigerator for 5 hours to set tofu.  It will be spongy moist texture, just like pumpkin pie.  Before serving, sprinkle with powdered sugar!

Serves: many

Preparation time: approx. 1 hr. plus the refrigeration

Excellent!  Wasnt sure what the 1 Teaspoon Ground was, so I added ground ginger.  It was an excellent pumpkin bar!  I used fresh pumpkin but sure canned would taste as good.  Thanks for recipe!

instead of sugar you can use Sucanat in a 1:1 ratio. that can be used in any dessert or recipe calling for refined sugar...can be found at good healthfood stores.

wow!i was a wee bit worried about how firm these would turn out, but they are perfect! just a slight crust on the top and bottom, and like a pumpkin pie in the middle. this is the best recipe ive tried in a while, and my kids can't get enough of them! thanks!

Yuck! Maybe it was just me, but this turned out squishy and not at all appetizing! Plus the flavor was definitely lacking something. Sorry, but I won't be making these again.

These turned out very well!  Theyre like pumpkin pie, but without the crust and with a cake or brownie-like consistency.  Very tasty!

these are amazing!  they turned out a lot more like cake than bars, but they are delicious even without icing.  i accidentally used a can of spiced pumpkin pie mix rather than plain pumpkin [i was rushe'd at the store] but they didn't turn out too overly flavored.  i took these to a potluck and everyone was in love. it was called spongey goodness more than once.

These turned out great.  The taste was excellent.  I used a teaspoon of ginger in place of the one ingredient on the list that wasn't complete.  For some reason, mine formed a dense 1/4 layer at the bottom.  It tasted a bit more like banana than the top part of the bread.  This may have happened because I used a very ripe, frozen banana that had been completely thawed.  Everyone that loves spicy pumpkin flavored food should try this!  odds

Very yummy and easy to make, I found a small bar quite filling so I'll be cutting this in half next time, it made tons! Has anyone tried freezing these?

mine, too were cake like... but they were delicious!  i recommend creaming together earth balance and a little maple syrup to spread on top of the warm bars.

The consistency turned out great!  Like a pumpkin pie-ish brownie.  AWESOME!  Definitely needs more spice though, I will double or triple spices next time.  Thanks for the great recipe!

OMG these are SO good.. I only made a 1/2 recipe but I used the entire amount of spice.. the double amount of spice really makes them wonderful.. yummy yummy yummy  Grin

I hated these. The texture was disgusting and the taste was bland but yet over powering. I did double the spices though. Bummer.

how can something be bland and overpowering at the same time?

these bars were really good when i made them.. the texture could be considered a little strange i guess.. like a very wet in the middle brownie..

some past reviews say it perfectly.. its like pumpkin pie in the middle (squishy/creamy whatever) and the top and bottom sort of form a crust..

im so sorry you dont like these.. if i had silken tofu i would make them again right now..

i think the look and idea of these sound really, really delicious. i love anything pumpkin and also love "'fudgy'' brownies. ill definitely be making these in the autumn and winter months!

Yummy!  I used presweetened and spiced pumpkin in addition to the spices posted and it turned out great!  I had to bake it about ten minutes longer than suggested but then again I used an 8x8 dish.  Thanks so much for this wonderful recipe  Smiley

Holy nom, these were so good! I think I maybe undercooked them a little, because I ended up having to eat them with a fork, but they are completely delicious and the recipe makes a TON of them!

These taste wonderful, hot or cold! I used less sugar than called for (1/2 c. instead of a whole cup), and they were still awesome!

Will not try again- modified ones weren't good.

Modifications didn't turn out for me.  I used half the amount of sugar and double the amount of spices.  Don't recommend that- the clove (and maybe ginger) overpowered and couldn't really taste the pumpkin (someone asked if it was gingerbread). Mine were cakey.  I tried to add a ton of powder sugar on top to compensate for the strong clove taste- weren't really good at all. I can't comment on the orig recipe since I changed it- but agree with the strange sounding comment about being too spicy and too bland with double spices- maybe not enough pumpkin taste since I used 1 can which was a little less than 2 cups.
