1/2 cup water
1 teaspoon vanilla
2 cup oatmeal
1-1/2 cup flour
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup non-hydrogenated vegan margarine, melted
1/4 cup vegan maple syrup, or to taste
Directions:Simmer dates in water for 5 minutes. Add vanilla and set aside. Mix oats, flour, baking soda and salt. Pour melted margarine over all and mix well. Add maple syrup to taste and until it forms a dough. Place 2/3 of the dough on baking sheet, flatten and press to form crust. Pour date sauce over top, then sprinkle on remaining dough over top. Bake at 350 for 25 minutes. Remove from oven and let cool to room temperature. Cut in bars and serve. Cover with foil and store in fridge.

These were really good! Especially when they have ccoled down a little but are still warm from the oven. I have been looking for a really good recipe for date bars ever since my favorite vegetarian bakery closed down and I couldnt get these anymore...but at last justice has been restored! Is it possible to make these with a less amount of fat??

this recipe was not that good at all. i followed the directions, yet it came out very bland and tastless.....

Not bad... I added a bit of cinnamon to the dates filling to get some taste.

The recipe tasted great! My only complaint was that there wasn't enough filling. I made it a second time around for Christmas Eve Dinner and I doubled the date filling. They loved it! I loved it! P.S. I also used a little cinammon in the filling.

Like other, I had to tweak the recipe. I also doubled the filling, and added walnuts and brown sugar to it. I omitted the vanilla, and didn't use any topping.. put it all on the bottom, and the date/walnut/sugar stuff was the topping. Delicious. Oh, also, use a 9x13 pan.
