Pecan Pralines

Ingredients (use vegan versions):

    1 cup brown vegan sugar, firmly packed
    1 cup white vegan sugar
    3/4 stick non-hydrogenated vegan margarine
    1/4 cup white corn syrup (like Karo)
    5 tablespoon water or rice or vegan soy milk
    dash salt
    1 1/2 to 2 cup pecan pieces
    1 tablespoon vanilla

Directions:

Cook all ingredients except pecans and vanilla in a saucepan until they come to a rolling boil.  Boil for one minute, remove from heat and add pecans and vanilla.  stir rapidly with a spoon as long as you can keep it up--candy will lose its translusence and get thick and stiff.  drop by spoonful onto waxed paper and cool.  Thats it!

Serves: 1-2 dozen candies

Preparation time: 30 min.

I used to work in a gormet candy store in Savannah,Ga...man have I missed those pralines! I'm excited to try this!

Can you substitute anything for the corn syrup?

It depends on what kind of corn syrup you want to substitute for.

For Dark Corn Syrup, you can substitute:

~ 3/4 a cup of light corn syrup, plus 1/4 cup of molasses.

For Light Corn Syrup, you can substitute:

~ 1 cup of dark corn syrup

~ 1 cup of treacle

~ 1 cup of liquid glucose

~ 1 cup of honey (if you eat that)

~ or 1 cup of granulated white sugar (but be sure to increase the liquid in the recipe by 1/4 of a cup).
