Apple Cake

Ingredients (use vegan versions):

    2 cups spelt or whole wheat flour
    2 teaspoon baking powder
    1/2 teaspoon sea salt
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon cloves
    1/2 cup vegan maple syrup
    1/2 cup unrefined corn oil
    1 cup diced apples, unpeeled (if organic)
    1/3 cup (approx.) apple juice

Directions:

Place dry ingredients in a bowl and mix well.  Mix wet ingredients together and add to dry.  Place in an 8 round, slightly greased, spring form pan.

Topping:  1/2 cup chopped walnuts (or nut of your choice) 1/2 tsp cinnamon 2 Tbsp rice syrup or maple syrup 1 tsp unrefined corn oil

Mix together and spread evenly over cake.  (You may have to wet fingers to spread mixture evenly.)

Bake at 350F for 40-45 minutes.  Cool and serve.

(This recipe works equally well with pears.  Just add 1 tsp ginger to cake and 1/2 tsp ginger to topping.)

Instead of above topping, spread with favourite jam or apple butter and put nuts in cake.

Calories: 236/slice Fat: 13 grams

Rather fatty, just eat with a low fat meal.

RE:rather fatty, just eat with a low fat meal... Try substituting equal amount of applesauce for the oil, and you can eat it with any kind of a meal! Very good cake.

What a yummy cake!!!  I substituted half the oil called for with flaxseed oil and the other half olive oil.  At least that way I don't have to feel guilty about how fatty it is.  I wish I'd read the suggestion about the applesauce before making it.  Sounds like a good alternative.

I reduced the fat by adding 1/2 the oil (I used walnut oil) called for in the recipe and substituted for the other half organic unsweetened apple sauce.  I'd recommend adding another cup of apples to create more moistness in the cake.  I also soaked 1/2 cup of sundried cranberries in the apple juice (use about a 1/2 cup to yield the 1/3 c required in the recipe)and added both the berries and reserved juice.  Try this recipe with pecans, too.  Everyone loved it!

I used sliced almonds instead of walnuts. The taste was wonderful, but it was very dry. Any suggestions?

This was lovely, really light and flavorful but could have used another 1/2 c or more of chopped apple.

Tasty stuff!  I threw in some raisins, dried cranberries, and 1/2 tsp of powdered ginger as well.  Didn't have corn oil, so I used soybean oil instead.  My SO and I both liked it.  Thanks for the recipe!

My son wanted an apple cake for his birthday and this was great.   Thumbs Up

Since it's late summer and the only baking apples I can find are Gingergolds, I made some adjustments to boost the apple flavor.  I replaced 1/2 cup maple syrup with 1/2 cup apple juice concentrate, 1/3 cup apple juice with 1/3 cup apple cider, and replaced 1/2 the oil with equal volume of applesauce. 

I topped it with a caramel frosting covered it with chopped peanuts and stuck a pretzel rod in the top to make it look like a candy apple.
