Chocolate Zucchini Loaf

Ingredients (use vegan versions):

    egg substitute equalling 3 eggs
    2 1/2 cups flour
    2 cup grated zucchini
    3/4 cup vegetable oil
    2 teaspoon grated orange peel (optional)
    2 cups sugar
    1/2 cup cocoa
    1 cup nuts (walnuts, etc.)
    1 teaspoon salt
    1/2 cup soy, almond or rice milk
    2 teaspoon vanilla
    1-1/2 teaspoon soda
    1 teaspoon cinnamon

Directions:

Beat egg substitute, add oil, vegan sugar and vanilla. Blend in dry ingredients with milk alternately. Bake at 350 for 50 minutes.

Serves: 2-9x5 loaves

Preparation time: 15 min


could you tell us when to add the grated zucchini, please???

clucas....This is probably a terribly silly question but being a non-cook I just want to be sure - By 1-1/2 tsp soda I'm assuming you mean baking soda and not drinking soda?? Thanks.

whenever it says soda it does indeed mean baking soda. Also I would assume the zucchini goes with the other wet ingredients. Very yummy loaf except I used whole wheat flour and while the flavor was very very good the texture was gummy.

This was yummy!  I used chocolate chips instead of cocoa (didn't have any) and I think I'll continue this in the future.  It doesn't rise at all, so you can fill your pan up pretty full.  And don't forget to grease your pan like I did!!!

made this as stated. i'm not really impressed. the bread has a good texture, moist and not too dense, but the chocolate flavor from the cocoa leaves a lot to be desired. i think next time i'll leave out the cocopowder and just make it zuch style since i like it otherwise. if i did cocoa again, i would probably cut it in half.

This is yummy, but I made a few changes.  I cut half of the sugar out and sub'd unsweetened applesauce, cut a 1/4 of the oil out, used 2-1/2c of zucchini, added an additional 2 tsp of cinnamon, and instead of the cocoa (which I just didn't have) I used about 1/2c of carob chips.  YUM!  Serve warm with just a little bit of Earth Balance.   Wink

i tried this again, minus the cocoa powder and using larenmisplaced's changes. i think my oven was messed up (is it dying? why are my baked goods doomed so frequently now despite my thermometer?) because it didn't cook through and was flat. the edged tasted good though.

This was delicious! I made a lot of changes, basically to suit my tastes/cupboards: (vegan) flaxseed meal+water for egg replacer, 1.5 cups ww flour, 1 cup regular flour, 3/4 cup cocoa powder, 1/2 cup apple cinnamon applesauce, 1/4 cup canola oil, 1 cup sugar, 1 cup pecansinstead of walnuts, and 1/3 cup chocolate chips. I made one loaf and 12 muffins. I baked the loaf for about 40 minutes, and the muffins around 30 minutes (because my oven is tricky). They came out fantastic. Definitely a keeper! Thanks!
