Praline Sweet Potato Casserole

Ingredients (use vegan versions):

    4 cups cooked, mashed sweet potatoes (or yams)
    3 tablespoon melted soy butter
    1/3 cup orange juice
    1/4 cup brown sugar
    2 tablespoon brandy
    1/2 ts ground ginger (1 tablespoon fresh grated)
    1 ts salt
    1/8 ts pepper
    1/4 ts allspice
    1 ts grated orange peel (I'm sure I use more)
    1/2 ts cinnamon

Directions:

Combine all ingredients. Mix well with an electric beater.  Pour into a well-buttered 2 qt. shallow casserole.  Spread with praline topping.

TOPPING: 1/3 cup brown vegan sugar, 1/2 cup chopped pecans, and 1/2 ts cinnamon.

Combine ingredients and mix until well blended.

Bake at 350 for 30 minutes


Marianne, I love this recipe.  I used dried orange peel as that's all I had, but I bet its even better with fresh orange peel. I plan to make it for a potluck tomorrow (11/22) at Kaweah Manor, the convalescent hospital where my patient is recuperating. Love, Mariani

Wow, I made this again, only this time I used freshly grated orange peel--What a difference!  Yummy. Definitely a candidate for the Cool Carrot Award.  Thanks so much for sharing this recipe with us!

This wonderful recipe raises the sweet potato to new heights--its absolutely delicious! My only suggestion would be to add a little butter to the topping mixture,so that it will get bubbly. (Adding a bit more brandy doesn't hurt, either!)

I'm gonna try this ecipe. It sounds REALLY yummy! I wonder what using boniato would tastes like.  Boniato is drier than sweet potatoes but are MUCH tastier!

Yummy - feels like a guilty pleasure, eating dessert for dinner!  I didn't have pralines (since they weren't on the ingredients list - oops!), so I substituted granola for the pralines and it turned out great!

Hey, Alexa!  Actually the praline topping is the pecan mixture in the directions part.  Praline is a mixture of pecan and sugar and (usually) fresh cream.  I know this because I used to work in a chocolate shop!  Smiley

This came out a bit too orang-y for my taste. I'd suggest less OJ or leaving it out and just going with the zest. I like to taste the sweet potatoes,too...

This recipe is wonderful and has become a Thanksgiving tradition at my house!  This year I learned that I can wash the sweet potatoes and put them in the slow cooker the night before so they're cooked and ready to go Thanksgiving morning.  Makes it so much easier!

i thought i had my mind made up about which sweet potato dish i was going to use for thanksgiving, but now i must give this a try!

Wow! Cheesy Made this for T-giving and it was a hit for veggie and non-veggie people alike! The orange flavor is brilliant. Very rich, so take small portions!
