Wild Rice Casserole

Ingredients (use vegan versions):

    1 cup wild rice, uncooked
    1 lb. fresh mushrooms, sliced thickly
    1 cup minced onion
    3 cup vegetable broth
    3 cloves garlic, minced

Directions:

Rinse wild rice well.  Combine wild rice, mushrooms, onion, and garlic in a 3 quart casserole dish.  Pour broth over it all, cover, and bake at 350 degrees for about 1 1/2 hours.


My children don't like wild rice do you think brown would work

I used regular brown rice and it worked.  This recipe reminded me of some of the chicken and rice recipes I used to make.  This could be a good recipe to make if I ever find myself craving the old ways.

For some reason, I had too much liquid left over So, throw in the blender with some pepper and whatever and make cream of rice soup -also, almosr forgot, I used potato instead of mushrooms.

Having used just wild rice [not one of those supermarket mixes with white rice] I would add another rice as the wild rice is quite overpowering by itself.

I made this casserole last night, and took it to a friends house who had invited me and my family to dinner. I just became a vegetarian recently and this was the first vegetarian dish I have made. I added brown rice to it, But I didn't add any extra vegie broth. Other than that it was very good for my first try at vegetarian cooking!

This recipe was excellent in my opinion, I loved it.  My variation was the instead of 1c wild rice, I used 1/2c wild and 3/4 brown rice.  I also added 2 stalks of chopped celery.

I accidentally gave this a 5 star rating. I would really only give it a 2 or 3.  It was very bland.

This is such a simple dish that I couldnt help but be tempted to make it.  Unfortunately it smelled better than it tasted.  I think the basic recipe is a good start, but I think next time I try this I might add a little flour and soy milk to give it a creamier texture, more like rice with cream of mushroom soup.  I used my own homemade broth, so it wasn't bland like one poster commented.  It just lacks something in texture perhaps because it is called a casserole, I was expecting a richer consistency.  Gonna try my version and I'll post again to let you know how it worked.

Much better the second time around.  Instead of 2 cups broth I used 2.5 cups and 1 cup soymilk with half cup flour dissolved in it.  And I added about 1/4 cup soy sauce too.  It turned out delicious with a creamier texture.  Try this recipe with the soymilk and flour and see what you think.

I had to adjust cooking time a lot.  Overall, it was good, but needs a little more spice ( but I am from New Orleans).
