Cheesy Casserole

What you need: 

1.5 pounds of pasta, shells or elbows work best
1.5 cups of vanilla soy milk
1 cup of water
slightly less than 1/3 cup of soy sauce
1.5 cups of nutritional yeast (be generous)
1 tablespoon of paprika
1 clove of garlic, crushed (more if you like garlic)
2 teaspoon of salt
1/3 block of firm tofu
1 cup of olive oil
1 dollop of mustard
bread crumbs
veggies, soy meat, fried tofu, whatever you want to add

What you do: 

Pre-heat oven to 350 degrees.
Prepare pasta.
Combine all ingredients (except for pasta, veggies, fake meat, etc) in a blender until smooth to make vegan cheese sauce.
Prepare extras. My favorite combination is spicy fried tofu, broccoli, mushrooms, and green peppers. Fake meat makes it taste like Hamburger Helper. Spinach and zucchini also work well. The possibilities are endless!
Pour a small amount of vegan cheese sauce and veggies/meat/etc into two baking pans. Pour pasta over, mix well. Add remaining vegan cheese sauce, coating all the pasta. Top with a layer of bread crumbs.
Bake for 10 to 15 minutes.
(vegan cheese sauce is also fantastic on sandwiches, dips, etc.)

SO HOW'D IT GO?

This is a delicious quick meal! I am so amazed at this cheese sauce!  I have really missed cheese sauce- mac and cheese and the such- I am so happy to have found this recipe!  Thank you!
