Taco Casserole

Ingredients (use vegan versions):

    1/2 package of Boca Burger meat substitute
    1 package taco seasoning (check ingredients)
    water
    1 15-oz can corn
    1 small can tomato sauce
    totilla chips
    1 15-oz can of beans (refried or black)
    1/2 onion diced
    non-stick cooking spray
    2 cups grated soy cheese

Directions:

Spray pan with non stick spray.  Warm the meat substitute a few minutes.  Put in onion and taco seasoning, using the amount of water called for on the taco seasoning package.  Cook for a few minutes, add tomato sauce and corn.  Cook a few more minutes.

Put chips on bottom of a deep 9 inch casserole dish (crunched a little bit, not too small).  Pour mixture over chips, then cheese, then more chips, mixture, cheese.  The mixture should be the last layer on the casserole.  Then put a layer of beans and more cheese.

Bake at 350 degrees for 15-20 minutes until hot. Very yummy!

Serves: 6

Preparation time: 15 min


We found this casserole to be exceptional for a good taste of Mexican food.  We are high protein eaters, and I basically played with this recipe and aimed at making it approx. 30 carbs per serving.  This is definitely going into my personal recipe book.

This is very tasty served on a bed of thick and chunky hot salsa!! It adds that last little kick to it....my roommate ate half the pan last night!

This is delicious. If you're watching fat intake, try this with baked tortilla chips. Also, to significan'tly reduce the amount of sodium in this recipe, use canned tomato sauce, canned corn, and canned beans with no salt added. You could also use thawed frozen corn and beans you cooked yourself. If you can't find the no salt added canned items, be sure to give the corn and beans a good rinse before adding to the recipe.

we have yet to try this recipe,and although it sounds mouthwatering, please stay away from the Boca Burger.  It is made by Kraft and is loaded with GMOs!  I reccommend Morningstar Better n Burgers or pretty much anything from Gardenburger.

(forgot to add in) If what you mean by boca burger meat substitute is like a crubly thing, try lightlife crumbles. I can't remember exactly what there called but you'll rcognize them. They have different flavors (taco!) also.

soyboy...I don't know if you have it by you, but GardenBurger DOES have a vegan burger.  It says it right on the box.  It looks a little like a chicken patty mixed with a veg. patty.  I also know that a few of their other burgers are vegan, but can't recall the names.  Best bet is still Better nBurgers...yummmmm.

Instead of tortilla chips, can you use tortilla wraps? I am guessing not since wraps are thin and break easily.

stride4...i make a similar version of this using wraps (layered in a springform pan or other round pan), and it works well!  yes, the beans should be drained and pre-cooked. Smiley

I'm a party pooper and made a 2 layer casserole since I was the only one eating it.  I used the wraps and it worked well even though I had to slice them. This was wonderful. The only recommendations I have are if you decide to use the wraps instead of the chips to put bake in the oven for at least 20-30 minutes until the wraps hardened. Mine weren't quite toasted after 10-15 minutes but it tasted like an taco sandwich which was still great. Also, I used the mixed the meat substitute with tomato basil marinated tofu which complemented the flavor.

I haven't tried this recipe vegetarian/vegan before, but I made my own creation of this.  I use tortillas instead of chips, and I just slightly crisp them in oil (like chips) but not too much.  Then I put them in the bottom of the pan, it gives it a filo/flake kind of consistency.  Also add cut red peppers, yellow peppers and mix with the meat part, and it will give it a nice flavor.  Do the same to the beans (I use black beans from Goya) and it will give it an awesome flavor.  Also be very liberal with the onion and garlic powder to the beans for more flavor.  Finally, the best recommendation.  Get chives and cut it into the vegan cheese for a nice green flavor.  When serving, a vegan friendly sour cream and some guacamole and more chips on the side, and you got yourself a great party dish.  Margi Smiley

I used 1/2 a tube of sausage substitue, refried beans with jalapenos, elimanted the soy cheese and made it in the microwave. It turned out pretty good, although i think next time i won't put the chips in the casserole and just serve them on the side.

It was Fab-u-lous=).....I used smart ground for meat- sub & I don't like cheese. of any sort. Used mexicorn. added 2 garlic cloves~ Turned out better than I expected.

This is pretty good but can turn out too salty if you don't watch the sodium content.  I used salt free chips and low sodium tomato sauce as taco seasoning is usually pretty high in sodium.

i used tortillas instead of chips and didn't use taco seasoning, just a lot of cumin and cayenne and it turned out excellent. i have also tried with both black bean and a layer of refried beans and this too was really good. this is a really quick, cheap, easy dinner that is very tasty.

foregoing the taco seasoning would really help with the dish being too salty. i just sprinkle the cayenne and cumin while i'm cooking the soy and then again on top of the casserole before putting the cheese on.

this was great: quick, simple, made with ingredients I already had in my house. 
About the salt:  I'm pretty sensitive to sodium. so i used a can of unsalted black beans, frozen corn, and mixed my own taco seasoning together (using a recipe on this site somewhere), so it wasn't too salty. I also used dried tvp instead of boca or  morningstar farms stuff.

This is a great dish when your short on time, and the flavor was great! I have a hard time of getting a hold of soy cheese, although it looks nice I don't think that it is needed with all of the other great flavors. Thanks a lot!

 Thumbs Up I have made this simple caserole several times. The family loves it. I used lightlife taco crumbles and topped it with tofutti sour cream , avo slices, and some hot sause.  So Yummy.

This was a pretty good recipe- my boyfriend loved it. I am not the biggest fan of soy cheese but I did enjoy it on this dish, and I could even make it without the cheese and it still has great flavor. Fairly quick and simple. Smiley

 Thumbs Up Good stuff.. made it last night and insed of using the taco sesoning i just used a layor of salsa and i added some blck ovlies to each layer.. great use of old chips at the bottom of the bag that no one seems to eat.. LOL.. good stuff will use this one a lot.. got my kids to eat their veggies without me fussing for them to.. Thank you so much.. loved it..

I was going to measure everything by cup and write it here so it'd be easier to prepare if, say, you didn't have a full package of crumbles or you have a large bag of frozen corn - but I forgot to do that.

In my mind, both the chips and cheese in this recipe are junk food, so I decided to only use one and chose the cheese.  I grated a 10-ounce package of Follow Your Heart Vegan Gourmet, Nacho flavor.  It was enough to sprinkle cheese on three layers (two mixture layers and one bean layer).  For sauce instead of grated cheese, I think Dragonfly's Bulk, Dry Uncheese Mix would work.

So good! I didnt have taco seasoning but I had chili mix....i dont really know what the difference is if there even is one but I used that instead. Very Yummy. Cheesy

This was so awesome.  I added a little cayenne for some heat & mixed the beans in with the "meat" & onion mixture.  It was basically like a nacho casserole.  I'll definitely make this one again.
