Tofu/Vegi-Loaf

Ingredients (use vegan versions):

    1 C.Each Mushrooms & Celery (slice thin & minced)
    1 C.Carrots (shredded or minced)
    1/2 C.Wheat Germ (adjust)
    1 Med.Onion minced (adjust to taste)
    2 Egg Sunstitute (use as needed)
    1 C.Cheese substitute(shredded or grated)
    2 C.Crackers or vegan bread crumbs (use as needed)
    tsp.Sea Salt & Parsely,garlic,pepper (adjust to taste)
    Tamari Soy Sauce (as needed)
    2 Lb.Tofu (firm)
    1 C.Sprouts

Directions:

Mix all the  ingredients well and bake in a loaf or spuare in the oven at about 350 till heated. a topping of choice could be spread on the top before rice or Nuts could be added.I made this one time and used real eggs, cheese and half the tofu with tuna. My  husband and kids are not vegetarian, but he loved it. The amounts could only estimates as I did not measrure when I made it.Hope it turns out well, please send any suggsetions.Maybe add green peppers..Did not know what to call it.

Serves: 6

Preparation time: 30 min.


Would love to try this but I don't know what to use as a cheese substitute

Lyn, use soy  cheese!  This does look excellent, and I think I'll try it.

(I wrote the recipe.) I used nutritional yeast Powder in place of the cheese I believe I just put the powder in directly since there was Tahini in it. I hpoe you enjoyed it, I wanted it to have a balanced nutrition content.

CORRECTION;Whoops,sorry now I look like a lier. I did copy the recipe from memory the best I could after I made,it sorry no Tahini it was Tamari.
