Tofu Medley CasseroleIngredients (use vegan versions): 1 fried tofu - cut into small cubes
1 cup wild rice mix or 1 box wild rice mix
2 carrots diced
1 med onion diced
3 stalks celery diced
1 can condenced mushroom soup
1/4 cup toasted walnuts chopped

1 teaspoon dried dill
1 teaspoon rosemary crushed
1 1/2 garlic granules
salt pepper to taste
Directions:Put 2 tablespoons oil in large frying pan.
Add tofu,onion,celery,carrot,seasonings and saute untill veggies are tender.
At the same time cook your rice untill done.
In a bowl add rice, tofu mixture, walnuts and mushroom soup.
Place in a casserole dish and top with crushed croutons.
Bake at 350 for 40 minutes or untill bubbly on top.
Serves: 4
Preparation time: 45 min
can you use anything besides mushroom soup??

Easy and yummy! I used a roux of olive oil and flour instead of mushroom soup (to reduce my sodium intake) and added fresh mushrooms. Thanks!

This was really nummy!!! I wasn't sure what amount was specirfically meant by 1 fried tofu, but found the 6 ounces that I had on hand to be just right. (I used a flavored pre-baked kind).

Thanks for that. I've never found a way to make my meat eating partner and step daughter eat tofu before but they ate that without moaning.

I made this and everyone really liked it. I did use a garlic herb tofu and fried it with McKays chicken seasoning (fake) and a little soy sauce. It did have a little to much rosemary so I would use just a little. I had to double this to feed our family of 5. All in all it was great. Thanks

I ended up using no rosemary at all and a lot less of the other spices. I also added cheese to the top. Plus I doubled a lot, and used boxes of long grain wild rice mix. Very very yummy and its now a family favorite!
