Pita Burritos

Ingredients (use vegan versions):

    1 bag of whole wheat, FF pita bread
    2 cans of black beans
    1 pound of rice
    1 can of salsa (whatever brand you prefer)

Directions:

Cook the rice (I found a bag of a mix of brown & wild rice - I recommend that!).  Drain the juice from the cans of beans, fill the can with water, and drain again (this is an attempt to reduce the amout of salt in the beans -between the beans & the salsa, the sodium in this is quite high).  Mix the beans and the rice and the salsa.  Stuff the mixture into the pitas.  Youre done.


I realize that you probably used canned beans because they are fast.  Howe'ver, fast is not always healthy.  A coating in metal cans has been found to leach into vegetables, and the liquids contained within.  The coating is called Bisphenol-A.  According to scientific studies, BPA produces an estrogenic response in human breast tissue cultures.  That is, in women, it produces breast cancer.  In men, it has been linked to other hormonal male organ cancers.  For more information,see:  see:   http://easyweb.easynet.co.uk/~mwarhurst/bisphenol.html

I knew for some reason canned vegetables didn't seem healthy to me, but I didn't have any reason to back it up.  Maybe now my boyfriend will believe me!  Thanks a lot.
