1 red pepper (roasted) or pimentoes
flour tortillas
1 tablespoon olive oil
2 teaspoon chili powder
1 clove garlic - chopped
Directions:Wash zucchini and cut each into match-sticks. heat Olive oil in wok and add garlic and zucchini. Add the chili powder as the zucchini is being stir-fried. Cut roasted pepped into match-sticks about the same size as the zucchini and toss into the wok. Briefly stir fry (just until the veggies heat through. Roll up in the tortillas put in an oiled baking dish and bake for 5 minutes. pour your favorite enchilada sauce over and bake for 5 - 10 minutes longer. enjoy
I printed this recipe last year, and I didn't try it until last night when I realized we had an enormous surplus of zucchini that was about to go south. Thank Heavens I did, because this was SOOOOOO GOOD!!! What a great and easy meal. Being that I m a vegetarian (not a vegan), I went ahead and used some of my moms jalapeno-style chihuahua cheese and that was really good. I'm sure this recipe will be just as great without the cheese, though. Good eating!

Hey, I had started fixing the zucchini today for lunch and was all cookin it and then I realized I was all out of tortillas!!!! I rushe'd and opened a can or refried beans and heated them suckas up. I covered the zucchini with the beans and ate with a fork. *Yum*
