Black beans, rice, and lettuce burritos!

Ingredients (use vegan versions):

    2 Cups of Cooked Black Beans or 1 can
    1/4 medium onion
    minced garlic (to taste)
    4 cups of steamed rice
    2 teaspoons of black pepper
    flour tortillas

Directions:

Bring the black beans to a simmer in their own juices.  Use fresh garlic and slice it very fine so it nearly dissappears when you add it to the beans with the pepper After about five minutes add the onions.  When serving use twice as much rice as beans and about a third as much lettuce, all wrapped in a nice flour tortilla.


These burritos are very good, easy to make, and best of all there is very little fat grams in these burritos! I highly recommend this item even though it may not sound exciting. I promise you will love the results. Try to make one, or buy one from Taco Cabana!!

This is a terrific recipe...I'm not a vegetarian but I find it as filling and satisfying as any meat dish.  Its also very popular with guests.  For variety, top with a little cheese and chopped tomatoes.  -Sarah

We had this for dinner tonight. I used dried black beans, because that's what we had, and it worked out fine... except I think I would change the proportions to more beans and less rice, I used white rice which is really bland. My girlfriend thought it needed sauce, but I added a whole onion and we ate them with salsa. Very very good. Thanks. Smiley

for sure gonna try this recipe today...i think i might do it with multigrain rice though, just for fun...maybe figure out how to throw some tofu in there too. yum! OH!! and some heat...mmm...  thanks for the recipe.

Pretty good!!! I used corn tortillas instead of flour and they were fine but I think flour would be even better!!! A mild salsa goes well with it too.
