ZDAW@ADM.ANGELO.EDUBlack Beans with TortillasIngredients (use vegan versions): 1 lb black beans cook until almost tender, then add:
1 can diced tomatoes
4 cloves garlic
1 chopped onion
cumin to taste
1
anaheim pepper or 1 can chopped green chiles
thyme
oregano
savory
pico de galo (sp) to put on top but picante sauce works well.
Directions:Top also with onions and anything else you might want. Put this in a flour tortilla.
How long do you cook the beans after adding the other ingredients? Do you drain the tomatoes?
