rikke@unm.eduBean and Tofu BurritosIngredients (use vegan versions): 10 oz. of firm tofu
1 small onion
3 cloves garlic
1 large potato, scrubbed
1 can of whole black beans
one chopped green chile, or chile powder to taste
oregano
salt/pepper
soy sauce
olive oil
tortillas
Directions:If you have a microwave oven, start by baking the potato for howe'ver long you usually do for a baked potato. Otherwise, you can boil it, or omit it. Chop onion and garlic finely. Soak tofu in a bit of soy sauce. Saute onion and garlic in saucepan until glossy, then add tofu. Saute until it looks like scrambled egg, then add the cooked, chopped potato, plus the green chile. Add the can of beans plus the spices (throw in whatever else you like) and heat it through. Serve wrapped in tortillas. This stuff is SUPPOSED to be hot!!

Made this for dinner last night.....it was great! Only thing I added was a couple of fresh, chopped tomatoes which I happened to have on hand....thanks for a great, easy recipe!!

This is a great recipe! You definetly need the green chili instead of the powder. I prefer it on a hardc taco she'll though.

This recipe is awesome, I ad it for my boyfriend and he loved it so much ( not a vegetarian) he told me to make more next time, we put bagged salad into the tortilla she'll also. I will be keeping this recipe for ever, oh yeah, this was the first time I ever tried tofu. I like it a lot now!!

This looks quite good. I was just about to make it now, when I noticed there were comments attached to the recipe. If its good enough to bring first time tofu eaters into the fold, I'm sure I'll love it. Kudos as well to this whole site. I was cruising the Web and stumbled across it.

Wonderful recipe! Another slight change is using sliced Tempeh instead of Tofu. Just soak the Tempeh in a 1/2&1/2 mixture of Vegan WShire. sauce and Soy Sauce for a few minutes and then warm slices in the saute mixture. It is like having the steak burrito instead of the beef

wow, great. the only thing i suggest is that you add a vegetable such as red bell pepper. this will make it a little bit richer. overall its somewhat dull, but i also added lettuce, and hummus. treat it like a real burrito/taco and you will enjoy this! ALSO: you can easily convert this into a DELICIOUS dip. mash it up, eh?

I didn't like this at all. Maybe I did something wrong. Maybe without the potatoe it would be better. It came out really dry, and bland. Maybe I will try some humus on it as was suggested in another comment.
