Sublime Burritos

Ingredients (use vegan versions):

    3 cups black beans-lightlymashed
    2 large avacados-lightly mashed
    1 cup textured soy protein
    1 med. onion-diced
    1 envelope vegan taco seasoning
    1 tablespoon ketchup
    1 16 ounce package coleslaw (w/ carrot shreds)
    vegan mayo
    2 large tomatoes-diced
    8 large flour tortias-warmed
    2 cups hot water

Directions:

Dice veggies and set aside. Mash black beans lightly w/ fork, set aside.

In a bowl mix packaged coleslaw with vegan mayo to taste, set aside.

Put textured soy protein into a bowl, add two cups hot water, taco seasoning mix and ketchup. Let textured soy protein soak up liquid.

Meanwhile, using med. heat, saute onions w/ about a Tbsp. oil in skillet or med. pan till soft (about 8 min.).  Add seasoned textured soy protein and stir untill heated through (about 5 min.). Put lid on pan and turn down heat to warm. (If the textured soy protein sticks to the bottom, add a Tbsp. water before assembing burritos).

Mash avacados lightly w/ fork.

Heat tortias according to package instructions. Layer all ingredients in any order you wish.  Roll up, and nuke for approx. 1-2 min.

I think its best to heat these up one at a time (for my microwave!). Archived comment by: or pre-heat oven to 325 degrees. Place burritos on cookie sheet covered w/ foil for 8-10 min.

Add any other condiments you wish, like:  cilantro, salsa, hot sauce, etc.. I made these up one day when I was craving a fish burrito. I left out the fish, added the textured soy protein and beans, and, well, you just have to try them for yourself. These are soooo good!!!  Enjoy!  Tammy G.

This recipe is actually quite good though I would recommend one deletion: the cole slaw. 

I also added sliced black olives, thin sliced fresh jalapeņos and drizzled Mrs. Renfro's green jalapeņo salsa over everything.
