Vegan Burritos

Ingredients (use vegan versions):

    3 cup rice
    small jar of salsa
    dark red kidney beans (one can)
    vegetarian refried beans
    tortillas

Directions:

Cook rice according to directions on package (usually 2 cup water to 1 cup rice to make 3 cups).  When rice is done add the jar of salsa and the kidney beans.  Keep the stove on low as to heat the other ingredients.  Cook the refried beans in a separate pan.  Heat the tortillas in a dry pan for about 15 second on each side.  Put a thin layer of refried beans on the tortilla add the rice mixture on top fold and enjoy.

Serves: 4.

Preparation time: 30 min.


This recipe is fast, but it is healthier to cook beans.  Heres why!  Bisphenol-A is a coating in metal cans that leaches into vegetables, especially beans.  Scientists have identified BPA as producing an estrogenic response in human breast tissue.  That is, it causes tissue cultures to multiply profusely, a sign of breast cancer.  For more information on Bisphenol-A and other chemicals found to mimic/block hormones in the body of wildlife, test animals, and possibly the human animal, see: Introduction to Hormone Toxicity at:  http://easyweb.easynet.co.uk/~mwarhurst/oestrogenic.html A better solution 1) soak (rinsed) beans for 4 hours or overnight; OR 1a) bring beans to a boil, simmer for one hour. 2) Drain.  3) Place beans, and all seasonings except salt, into a slow cooker/crock pot and cook 8-10 hours until done OR 3a) simmer beans 2-3 hours until done.  4) prepare recipe, as usual.  This is NOT AS COMPLEX as it sounds.  And, it is a lot tastier and healthier!  Enjoy!

Thats so gross, and scary; thanks for telling us about it!  I like the process of cookin my own beans, but I always seem to undercook them.  Thanks again for that information.  The recipe sounds delicious though, I'll try it with dried beans.
