Jeannes 100% Whole Wheat Bread

Ingredients (use vegan versions):

    3 teaspoon dried yeast
    3 cup whole wheat flour (I usually use Spring Wheat WW flour)
    3 tablespoon gluten (approx - according to kind of whole wheat flour used)
    3/4 teaspoon salt
    1 teaspoon sugar
    1 3/4 cup water

Directions:

Developed for use with the Dak Turbo Baker V Bread Machine.


Sounds yummy, but should we set the bread machine for 1 or 1 1/2 lbs?

I made your recipe today.   The top sank and it seemed to taste a little bland.  Is this enough salt.  Also, shouldn't there be some shortening in the recipe?

You may need to add more flour or less water to keep it from sinking. Bread can be finicky that way. An easy way to tell is to check how sticky it is before it goes through its last kneading. If it sticks to your finger, its too sticky and needs more flour. Add a tablespoon at a time until its right (it will spring back at the touch). If its too firm it may need more water, so add a tablespoon at a time, until it springs back at the touch.  Bread doesn't need any fat added. You can add a tablespoon or two if you want without altering the recipe too much. All the added fat does is help the vegan bread have a longer shelf life. You can always add more salt if you want.
