Peanut Butter Oatmeal Muffins

Ingredients (use vegan versions):

    1 cup whole wheat flour
    1 1/2 teaspoon baking powder
    1 cup rolled oats
    3/4 cup soy milk
    Ener-G Egg Replacer for 1 egg(I use 1 tablespoon ground flax seed and 3 tablespoon water)
    1/3 cup peanut margarine
    1/3 cup maple syrup

Directions:

In large bowl mix flour, baking powder and oats.

In a separate bowl combine milk, egg or Ener-G Egg Replacer, peanut margarine and maple syrup.  Add to the dry ingredients; stir just until moistened.

Spoon into prepared muffin tins.  Bake at 400 degrees F for 20 to 25 minutes.  Makes 12 muffins.


I would like very much to make this vegan bread, but I do not know what peanut margarine is, where it can be purchased, or how to make it.  Please reply.

I had to make this recipe as soon as I had espied it!  Quite delicious.  I would have to say that my two sons were in complete agreement with my assessment, as all twelve of the muffins had disappeared within one afternoon.  Thank you for a great recipe!

I do not have a clue what peanut margarine is.  It is a typographical error, right?  I have never seen it in the grocery stores.  Is it a Specialty store specialty?  HELP??

    I suspect peanut margarine is a bit of a vegan joke. Smiley  Just peanut butter as far as I can tell.

hmm, let's think, shall we?  Margarine is a substitute for butter.  Thus, use PEANUT BUTTER.  And stop watching tv.

Very good-- the texture was different from most muffins (due to the oatmeal) but I liked it.  I added choc chips and it really enhanced the recipe (but then again, chocolate chips enhance just about everything....)  The peanut butter flavor was pretty mild.  Overall a very good muffin, slightly out of the ordinary.

This is  a good, basic recipe.  You can use another cup of flour (or even oat flour) in place of the oatmeal.  Sugar instead of syrup also works.  3/4 cup chocolate chips are a nice addition.  You can replace the Ener-G with 1/4 cup unsweetened applesauce.  Very versatile.  This web site changes butter to something like vegan non-hydrogenated margarine. My guess is that peanut butter got caught by that.

I thought these muffins were absolutely delicious!  Light and moist just the way I like them.  Although I used a Cup of spelt flour instead of Whole Wheat.  And used about 2 tsp of aluminum free baking powder.  I also used 1/3 C of unsweetened Applesauce for the egg replacement. And I used unsweetened vegan soymilk.  And a little bit less than 1/3 C of maple syrup but mmm delicious!

The muffins were very good! I did not have egg replacer, or apple sauce, so I just poured some oil in instead, and also did not have enough peanut butter, so I had to use a bit of almond butter. I added bannanas to some, and apples to others for a bit of variety, and the bannana tasted good while the apple was a bit odd. Also, I didn't need to cook them for as long.

These were really good.  I liked how dense they were and the mild peanut butter flavor was interesting.  I took a bunch of them with me when I went out of town and dipped in maple syrup, they made an excellent breakfast.  I'm wondering what kind of peanut butter people used.  I like Teddy Bear salted kind.

I've always made these with applesauce as the egg replacer and they always turn out great. I like adding 1/3 C. roasted carob powder and 1/4 C. apple juice to the batter too.

I made these for my loverboy and he gobbled them up.  I subbed honey for the maple syrup.  they don't come out too sweet, but I like them with jam or honey on top.  (I know some vegans don't eat honey, but we do.)  the peanut butter is yummy - they are a different kind of muffin, kind of dense and yummy.  I did add a banana, but next time I'll add more.

These were yummy, I made a whack load of muffins on the weekend and these were one of the recipes I tried, defiantly one of my fave! I did change one thing though: I put the oats in a food processor and ground them up .... I don't like oatmeal-like consistencies in mt muffins.
I would reccommend these to everyone. (Oh and I also used cashew butter instead of peanut butter)  Cheesy

I think egg replacer sucks...so I doubled the baking powder and added a large mashed banana!!  Super good.

These rocked! I followed as directed, except I used rice milk and a flax egg. I also added about 1/4 cup of chocolate chips. These are super good! Very dense - almost like having a big peanut butter cookie - yum! My batter only made enough for 9 normal sized muffins, though, and I only baked them for about 15 minutes because they were starting to brown up. I made them last night then told myself they'd be my reward after my 6.5-mile run this morning - it certainly motivated me to finish!!  Grin

 1 cup whole wheat flour

I made these last night, and unfortunately, I didn't like them very much.  Undecided Maybe it was my fault, because I was out of maple syrup and rice milk but I made them anyway, using a little molasses and water, respectively. I also added some sugar, vanilla, chocolate chips and cinnamon because the batter tasted kind of odd to me. If I make them again, I'll be sure to add a tsp of baking soda because they didn't really rise at all. I took a picture, I'll post it soon if it came out.

I really didn't like them much.  They weren't sweet at all and kind of heavy. The peanut butter was very mild and the muffins just tasted blah and bland.  I won't be making them again.

So easy, so fast, and so yummy.  I'm a pb junkie, and these hit the spot.  They aren't necessarily sweet, despite the syrup or honey (I used honey), so you'll definitely want to eat them with a bit 'o honey, jelly, or maybe honey 'butter'.  If you don't make ginormous Starbucks-size muffins, you'll absolutely get 12.  Try it!  Great for healthy snackin' on the go!

I had to make some substitutions, but they turned out great. I used 2 T applesauce as the egg replacer, and grape jelly for the maple syrup to make PB and J muffins. I also don't like baking with whole wheat flour so I just processed my oats a bit and used a bunch of oats and about a quarter cup of white flour to make them smoother. They turned out delightfully lumpy and filling and sweet with little pockets of jelly everywhere. Definitely a keeper.

these were not sweet enough for me. they're not bad tasting, but I didn't really care for them.  if I made again, I would add more sugar.

how much jelly did you use?  and did you just fold it in at the end?

I think I just used like 1/3 of a cup, instead of the maple syrup. I would suggest melting it a bit or using preserves. The jelly was kind of chunky.
I was just craving these yesterday. Delish. Good luck!
