Hot Cross Buns

Ingredients (use vegan versions):

    1 cup flour
    1/2 teaspoon salt
    1 teaspoon mixed spice
    1 tablespoon sugar
    500 gm currents
    1 tablespoon peel (optional)
    1 1/2 teaspoon yeast
    1 teaspoon sugar
    1/3 cup warm water
    1/2 teaspoon cinnamon

Directions:

Put flour, salt, spice, 1 tbsp vegan sugar, currents (and peel) in a bowl.  Leave in a warm place.

Mix yeast, 1 tsp vegan sugar and water.  Leave yeast mixture to rise.  Stir yeast mixture into flour mixture.  Knead, roll into buns and leave in a warm place to rise.  Bake 10-15 minutes at 425F. Makes six.

what exactly is meant by peel?

You can buy candied citrus fruit peel at you HFS or at most grocery stores around Christmas and Easter.

I didn't have currants or peel, so I just used dried cranberries.  The buns were nice, crusty and kind of dense.

I've made these a couple of times and they come out quite dense and heavy. I'm not sure what I'm doing wrong. Any suggestions?

yes, i've made these a couple of times now and they do come out really heavy.  the dough doesn't rise very much to be honest....
