Grammy Cooks Banana Bread

Ingredients (use vegan versions):

    1 1/2 cup whole wheat pastry flour
    2 teaspoons baking powder
    1/4 teaspoon baking soda
    1/2 teaspoon salt
    2 tablespoons flax seed meal (ground in the blender)
    2 tablespoons corn meal
    1/4 cup oil
    1/2 cup cane juice crystal or sucanat or combination
    1 cup mashed bananas
    1/2 cup water
    1/2 cup chopped walnuts or pecans, optional

Directions:

Mix first six ingredients well.
Mix next four ingredients well.
Mix both together and stir in nuts if you want.

Pour into sprayed loaf pan and bake at 350 for 45-50 minutes.

I have tried many banana bread recipes on VegWeb and have yet to taste one as good as my moms.  So I got her recipe to share and here it is!

She is the BEST COOK in the world!  She can make anything taste good!

Serves: 1 Loaf

I made this yesterday, and it was very tasty. Since I'm eating the loaf by myself, I froze half once it had cooled and been sliced... but something tells me I'm going to be digging in the freezer for it within a day or two. Next time I'll make sure I have pecans or walnut on hand to add to it. Thanks!

This is the best banana bread of all time.  No word of a lie, not even exaggerating.  Way fluffier and lighter than any vegan baking recipe that I've ever tried. I added some fresh ginger and toasted coconut.  Thank you so much!

Fantastic.  I omitted the sweetener and used lite vanilla silk instead of water.  Also used 4 T flaxmeal and no cornmeal.  Oil replaced with applesauce.  All in all really yummy.  I guess mine was more of a health food version =)

I followed this recipe to the t. The bread was more like a semi-sweet cake. It was moist and well risen with good texture. It tasted wholesome & delicious. It may be a healthy sweet treat for kids I think.

Can I just use sugar instead of cane juice crystal or sucanat?  I have never even heard of these things before, but I've got plenty of sugar & brown sugar in the house already...

This was really, really good.  The substitutions I made:  I used regular flour instead of whole wheat, I used 4 Tbsp flax instead of 2 flax & 2 cornmeal, I used Nucoa margarine instead of the oil, instead of the cane juice crystal I used 1/4 C white sugar & 1/4 C brown sugar, I used two mashed banans instead of the 1 C (which was about 1 banana), and I used soymilk instead of water.  I also added about 1 1/2 tsp cinnamon.  I made it with walnuts, and it was awesome!  This is the recipe I'm gonna use from now on.

Been using this recipe for banana cake every time and its almost foolproof. Yesterday I used 1 cup flour and 1/2 cup semolina instead of 1 1/2 cup flour and it was great. I always seem to need more than than 1 cup of liquid to get a cake batter-like consistency though.

Mine just came out of the oven.  Followed the recipe except used regular whole wheat flour instead of pastry.  Turned out good.  It was light and fluffy like the other comments had stated, but it didn't rise much -not even to the brim of the loaf pan.  Tastes great though.

wow, i'm impressed. i've tried banana bread a few times with usually gummy and fairly bland results - this has a great texture and is very yummy. i used regular whole wheat flour, a heaping tsp of allspice, left out the flax as i didn't have any, used fat free soymilk instead of water, and sprinkled the top with cinnamon. the house smells fantastic.

We love this bread, too! It's light and fluffy, and the cornmeal adds a great texture! I use just regular unbleached flour and evaporated cane juice and it's perfect every time. Organic bananas were on sale for $0.39/lb so I made a bunch of loaves and have some in the freezer - I will post back after I thaw one and let you know how they take to freezing. This is our banana bread standard recipe now:) One thing though - I used Rapadura for the sugar last night and I think it changed the texture. It made it kind of gummy, so I am sticking with evaporated cane juice. Thank your Grammy for me!!!

This is an excellent banana bread recipe. I used regular whole wheat flour because I didn’t have pastry flour, plain soymilk instead of water, and omitted the sugar. The bread was delicious, cooked all the way through, and the bananas made the bread sweet enough without the added sugar. Absolutely delicious!

This is a great recipe!  It's a bit different from the usual banana bread- lighter, and the cornmeal adds a nice texture.  I used a mixture of regular whole wheat flour and white flour, and it turned out great.  I also added a touch of cinnamon.  I'll definitely be making this again.

This is the best banana bread ever!!! I score a whole bunch of organic bananas so I made a lot of banana bread (some with whole wheat, some with white flour, some with walnuts and some without)in all instances I used corn flour rather than corn meal...this turned out sooo good!! I also made muffins!! All my friend are going crazy and demanding more!!! (luckily I scored some more organic bananas! ;-)

I wanted to try a new recipe for BB and this one is delish! left out the corn meal and replaced the most of the oil with applesauce (a scan't 1/4 c a.s. with the rest (1 TB or so) oil). I made one with chips and one with walnuts. This will go into my regular rotation.  Cool

you know, this is like one of the only recipes I've made to turn out!!  Cheesy This banana bread is totally DELICIOUS and moist and perfect; I would never guess it's vegan! Tastes best after cooled with a tad of butter. I'll enjoy this recipe for awhile...thanks!!!

This banana bread is very delicious.  I made it with spelt flour instead of wheat flour and it was still awesome!  I'm frankly a little concerned that I might eat most of it by the time my boyfriend gets home from work.  Man...so good.

I used 1 cup spelt flour, almost 1/2 cup millet and one massive tablespoon of light buckwheat flour (I love buckwheat in banana bread), plus I substituted melted Earth Balance ("Buttery Sticks") for the oil and used Just Us fair-trade oraganic cane sugar for sweetner.  I have pretty much the same sentiment as all of the above commenters:  didn't rise a lot but light&fluffy, great texture and tastes amazing.  Thanks!

The best banana bread just became the best pumpkin bread.  I served this recipe substituting pumpkin for the bananas and added a teaspoon of pumpkin pie spice (you might want a little more) and all the ladies at the bridal shower gobbled it right up!

This turned out wonderful! I used canola oil for the oil, added a tad more flour along with a tablespoon of a liquid egg replacer I have, put in some walnuts, and used regular white sugar (we didn't have anything else). Most vegan baking recipes don't work out for me but this one wasn't just easy to make, it smells good and tastes amazing!!
