Banana Nut BreadIngredients (use vegan versions): 3 ripe bananas
2 tablespoons olive oil
2 cups flour
3/4 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup coarsely chopped walnuts
Directions:Preheat the oven to 350 degrees Fahrenheit. Grease a loaf pan. Mix the mashed bananas and oil in a large bowl. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts. Pour the well blended batter into the greased pan and bake for one hour. Remove and let cool.
I found this recipe works better than many I've tried since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice howe'ver olive oil is the healthiest!
Makes: 1 loaf, Preparation time: 15 minutes, Cooking time: 60 minutes.
1 tablespoon of salt seems like a lot for a loaf of bread. Should it be 1 teaspoon?

Yum! I'll be making this again. I've just started changing my diet, deleting butter, milk and eggs etc... and this is my first recipe from this web site. I thought id end up with someing dry and drab, but this Banana Nut Bread is super. I cooked it in my nut loaf tin, added a sprinkle of sultanas to the mix. And cooked it for 40 mins at 180C Also 1tsp of salt is suffice. 1 tbs must be a mistake in the recipe

this is a good bread. I made some modifications, basically reduced flour by 1/2 c and added more walnuts and ground flaxseed. Reduced sugar to 1/2 c and used only 1 tsp salt per stoneys comment. I found the batter was a bit thick and added 1/2 c applesauce. my new favorite banana bread recipie...

This was great! I used 1/2 whole wheat, 1/2 white flour and used the applesauce suggestion. I also used honey instead sugar and made these as muffins instead of a loaf. I tend to be sensitive to salt content, so even 1 tsp seemed a bit much to me...I might use a bit less next time. MMmmmmmm! Thanks!

Just brought this recipe from the oven.... it is absolutely wonderful! I did all the little changes suggested: 1/2 w.w.flour, 1/2 white, 1/2 cup applesauce,added flaxseed and used 1 tsp. salt. GREAT!!!! Just a question, could I use baking powder instead of baking soda and still get the same great results? Tsp for Tsp? THANK YOU!!!!!!!!! Bunny

This bread was amazing. I added 1/2 cup soymilk and 1/2 cup oatbran. Even my boyfriend who doesn't like any baked foods liked it, and asked for more. Thanks for the recipe. vegirunner

I was extremely impressed with this bread. It was the first vegan baked good I've made, and since it turned out so great, its given me a good impression of vegan baking and I'll be sure to do much more in the future.
