Apple Loaf

Ingredients (use vegan versions):

    1/2 cup soy margarine
    1 cup white sugar
    3 teaspoons Enger-G Egg Replacer
    4 tablespoons water (for egg substitute)
    1 teaspoon vanilla extract
    1 cup apples-peeled, cored and shredded
    2 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup chopped of your favorite nuts

Directions:

Preheat oven to 350 degrees F. (175 C) Grease one 9x5x3 loaf pan, or muffin tins.

Mix flour, baking powder, soda, salt and nuts in a bowl.

In a large bowl, beat soy margarine, sugar, egg replacer and water until smooth.  Stir in vanilla.  Stir in shredded apples. Pour flour mixture into batter.  Stir only until moistened.  Scrape into loaf pan, or spoon into muffin tins (leaving a little room for expansion) This will not be like a normal vegan bread dough.

Bake for 50-60 minutes ((30 minutes for muffins) or until an inserted toothpick comes out clean. Let stand 10 minutes, then remove from pan. Place on rack to cool. Absolutely scrumptious!

Serves: 1 loaf, or 12 muffins

Preparation time: 20 minutes


Superb! I added spices (ginger, nutmeg, cinnamon, allspice) and I found the mix dry so I added 1/2 c. of rice milk to the wet ingredients.  I also made a topping out of margerine, flour, sugar and cinnamon. My roomies loved it!

This loaf rocks!  I made muffins out of these and they came out perfectly; soft and moist; just the way I like them!  I wish I would have made more but I'll have to wait until tomorrow for that.  I used corn starch as my egg replacer and I omitted the nuts.  Thanks for a 5 star recipe!

I really liked this bread. I added an extra cup of apples, and left out the nuts, but it came out super moist and yummy. Very rich too

YUM.  I used applesauce instead of butter and added ginger, nutmeg, and cinnamon after reading other reviews.  I also reduced the sugar to 3/4 cup instead of 1c. very good!

yummm this came out perfect, soft, moist, yummy. It's really easy to whip together too. I used 2 cups of apples though, and no nuts. I think I'll use even more apple next time, and maybe some raisins or something  Smitten mmm
