Easy and Decadent No-Knead Wheat Bread!

Ingredients (use vegan versions):

    3 cups whole wheat flour
1/3 cup unrefined sugar (or other sweetener)
    1/2 tablespoon salt
    1 package dry yeast
1 teaspoon cinnamon (optional, but *really* yummy!)
    1 2/3 cup warm water

Directions:

Mix all the dry ingredients in a bowl and add the water last.  You can use an electric mixer, but I find a spoon works fine and is much easier to clean ;]

Pour the batter into a greased loaf pan and smooth out the top.  Cover the dough with a towel or greased plastic wrap and let it rise for about and hour (until its doubled in size).

Bake in a 400° oven for about 45 minutes (until a toothpick comes out clean).

This is really a treat with a nice raspberry jam.  Such a simple pleasure!

P.S. One can also add 1/3-1/2 cup raisins for a scrumptious cinnamon-raisin vegan bread…

The best and easiest wholewheat vegan bread recipe I've used.  Delicious!

Covered for two hours.  Failed to rise.  Baked regardless...gross.  Followed recipe exactly.  This just sucked.

Archived comment by: krikkit4
krikkit4-- Your yeast didn't work... It must be old or maybe the water you used was too hot or too cold.

Archived comment by: sharway
Krikkit4: It often helps if you put the yeast mixture in a warm place to rise (like inside a warmed oven- not HOT...just warm)and if you add some of the recipes sugar/sweetener to the yeast mixture,(mix the yeast and water and sugar first, and let stand a few minutes) it'll help get things going. (and I say these things with a staunch record of heterosexuality!)

made my first loaf of bread ever, and what a GREAT recipe!  the cinnamon (of which I'm not usually a big fan) really made it special.  my batter didn't quite rise enough though, I don't think.  maybe ill add a little more yeast next time to try.  REALLY REALLY GOOD RECIPE!  ***** a*sue

Well, this came out very flat after baking. But to its credit, it has a nice texture, was TOTALLY easy to whip up, and smells (and tastes) delicious! Next time I'll try the raisens for an extra treat!

this turned out beautifully!  i used 1/4 cup sucanat andt the bread is the perfect sweetness.  wonderful texture, hearty taste, and my house smells amazing now.  5 stars!

I messed up a bit while making this bread, but plan on making again soon. It tasted good, but i burned it and made it fall.

This is a great recipe and VERY EASY!  Make sure your yeast is fresh and the water temp. is around 105 and the temp. you rise in is around 85. (warm your oven and turn it off and let it rise in there.) If you do this it turns out great!  Thanks for sharing the recipe!

I give it 5 stars as a breakfast or snack bread.  Its good with margarine or some jam but I was looking for something I could use as a sandwich bread.  This bread was flat on the top so it made rectangular slices, which isn't the end of the world, just seems a little odd as a sandwich bread. 45 minutes baking time might be a little too long for you, as it was for me. I checked mine at 35 minutes and it seemed a little overdone around the edges.

This was excellent, truly no kneading needed! I started making this recipe and found out I only had 1 1/2 tsp of yeast! (1 pkg= 2 1/4 tsp). The bread still rose nicely, fluffy and delicious with cinnamon! It was so easy to put together I might have to make this more often!

This was so yummy.  I made it to go with dinner a few nights ago, and my husband ate two pieces before we even sat down to eat.  By the next morning it was all gone.  The texture is perfect, and the cinnamon does make it special without making it too sweet.

This was awesome! I added some raisins and that was great!  This is a very versatile recepie...I think you could add just about anything to this and it will still be good.  Also, mine had a wonderful crust. YUM!!!

This is really good actually.  I had to add more than 1 2/3s water, and I add flax seeds to the top of it..my non-vegan family members are all huge fans of it even.

mmm. this was so easy and yummy. we had some pomegranates i didn't want to go to waste, so i threw half a cup of the seeds in with some raisins and it worked really well. i may have to start making this regularly!

This was phenomenal!  I have been baking bread for a while now, and have been searching for a bread with good flavor.  Not only is this bread yummy, I am completely blown away that I didn't have to knead it.  I added a few tablespoons of molasses when I stirred in the water, and I decided to use the cinnamon, which gave it the perfect flavor.  Thank you so much!!!   Grin

This was so good!  I've never made bread before, but I made it and it turned out fabulous and was gone in about 2 hours -- the entire loaf.  My 1-year-old LOVED it too!  I also think it would work great for french toast, I'm going to try that tomorrow!

Oh yeah! This is some good stuff. I added the cin,  raisins and some ground flax too. It is so yummy right out of the oven and warm. My 6 yr old is in love. Thanks for a great recipe -- I will use this again, but next time I think I'll try savory.
BTW, I think it would do well as sandwich bread, especially if you cut it a little thick.

second attempt at making this bread, again, completely satisfied. I used half whole wheat, half all purpose. baking done in 25 minutes. no cinnamon added. I think I like the taste even better.

I baked this bread for 25 minutes and it had already started to burn but inside wasnt done baking. It tastes pretty good after I turned off the oven and left it in for a couple of minutes. Very easy to make. I added raisins and ground flax seed and it was definitely good but too hard on outside compared to inside.

Great recipe. I finally made my own wheat bread. Thank you very much for the wonderful information. Grin
I followed the whole things except the cooking time. This time I tried 25 mins, and the bread came out a little bit burned. I will try 20 min next time. I think this situation is quite depending on what kind of oven people used. So far this is quite simple and excellent recipe for me and my family. Smiley

i obviously did something wrong as i had to use a lot more water to bind the mixture and my dough didn't rise very much!  it can't be my yeast as it's brand new....it's in the oven at the moment but i'm not too hopeful!  i think i'll just stick to the 'outrageously easy big bread' recipe that's on here too as i haven't really had problems with that one!

well, it turned out to actually be very nicely edible, so i wasn't too disappointed in the end.  it also rose a bit more whilst it was cooking so it didn't come out too much like a brick either - hurrah!

Have to play with the cooking time a bit, guess it depends on your oven!   Wink  Overall a very easy loaf of bread to make, works in a pinch!  I am going to try baking it at 350 for 1/2 hour...we will see what happens.  I also used a round casserole dish to rise and bake with.  Turned out good!  It turned out a nice large, round loaf.   Looking forward to trying the cinnamon/raisin version.

Well, after letting my bread rise properly (thanks mom), this turned out to be just about the best-leavened bread I've made yet. I actually made it before, but my dough deflated and it came out pretty dense. But this time, it was actually sandwich quality (and whole wheat too! Yay!). Best yet, that cinnamon is yummy.

Just made this and it came out great!!  I threw in some thyme, roasted garlic, chives, and a few more herbs before I realized that the sugar was supposed to make it sweet versus herby, but I still love it to bits and pieces!  And it was sooooo easy!  Thank you!  I'll definitely be making this often.
