Oh So Easy Oatmeal Molasses Bread

Ingredients (use vegan versions):

    1 cup quick oats
    1 1/2 tablespoon margarine
    1 pkg active dry yeast
    1/2 cup warm water
    1/2 cup molasses
    2 teaspoon salt
    4 2/3 cup flour (of choice - I use half whole wheat half unbleached for good density)
    2 cups boiling water

Directions:

Bring the two cups of water to a boil, add to the quick oats and the margarine.  Let this mixture sit for one hour.

Stir the yeast into the 1/2 warm water and let it sit for five minutes.

Stir the yeast mixture, molasses and salt into the oatmeal mixture.

Stir in as much flour as possible and then turn out onto a floured surface and knead in more flour for about 8 minutes or until its smooth and elastic.  (I read once that a yeast vegan bread should be the consistency of an earlobe!  it wasn't until I read that, that I understood smooth and elastic)

place the dough in a bowl sprayed with non stick spray, spray the top of the dough and cover with a towel.  let rise until double (this time will depend on room temperature, type and freshness of yeast)

punch down the dough (this is exactly what it says, deflate it) and cut into two.  shape each into a loaf and place in a loaf pan (my loaf pans are non stick but I also spray them with Pam)  Let them rise again with a towel covering them.

Bake at 375 degrees for 35 minutes (the smell will make you drool!) and that's it!

I let mine cool on wire racks, then slice one and place the slices in a large zip lock bag and keep it in the fridge.  The other loaf goes in another zip lock bag and goes into the freezer for when the first runs out.  This bread is sooo easy and quick (kind of, it takes a lot of time for it  to rise and for the oats to sit but you can do all of your other chores during that time.  the actual time spent with the vegan bread is minimal) and perfect for everything - toast, sandwiches, etc.  and its a breeze to make!

Preparation time: 2-3 hrs


I found that regular rolled oats work fine in this recipe.

Thank you for this vegan bread recipe. It *was* very easy to make. I used half whole wheat flour and half unbleached white flour. This slightly sweet bread makes especially good toast.

I don't understand what is meant by vegan bread exactly. Isnt most bread vegan? I buy many breads from local bakeries here in Seattle and I have never seen any dairy or animal products listed in the ingredients. Can someone fill me in? thanks

I'm not vegan, but I know a lot of breads contain eggs. Some also contain honey as a sweetener.

I've actually found that dairy is the problem when selecting a vegan bread. A lot of the Arnold brand breads contain milk or milk powder, or sometimes just lactose-products. Eggs are usually not a problem unless you're dealing with sweet bread or a cake-y bread. Also watch for honey, like kree said.

delicious!! it has a nice chewy texture and the molasses gives it such a nice taste.  I love it toasted and slathered with lots of vegan margerine :-)

This bread wasn't hard to make but it did take forever to make. The molasses smelled a bit strong to me, but the bread tasted great. So good warm with some soy butter.

doggystyle- We are lucky to live in the Northwest with its abundance of good food sources. I too find many kinds of bread here locally that are wonderfull. Not all parts of the country are so lucky though... Many areas have supermarkets only and few choices beyond Wonder Bread.

I forgot to let this rise a second time and it still came out great!  Crusty on the outside and perfectly dense and moist inside.  I was looking for a good bread to make instead of buying it from the store and this will work perfectly.  Next time I make it, I'll add some spices, like cinnamon.  It tastes delicious on its own but cinnamon (or cardamom) would really heighten the flavor.  I'll also let it rise twice!  We ate it fresh from the oven with raw coconut butter.  YUM!

This bread is so good.I make all the time.It's so easy once to get the hang of it.I get it ready in no time. I make one loaf and a dozen rolls minus a roll because they are so yummy!!I sprinkle the tops with sesame,and poppy seeds maybe a little dill and sea salt just before baking.
