KyleW@accglobal.netFabulously Fast FocacciaIngredients (use vegan versions): 2 cups of unbleached all purpose flour
1 teaspoon salt
1 tablespoon baking powder (that's why its fast!)
6 tablespoon olive oil
2/3 to 3/4 cup of water
2 cloves of garlic, crushed in a garlic press
1 teaspoon paprika and 1/4 teaspoon cayenne
some canned plum tomatoes (not the juice)
black olives, green olives, sliced into rings
additional toppings include: chilis, basil, onion sliced very thin, chopped fresh
parsley, chopped sundried tomatoes and the piece de resistance....pesto!
Directions:1. Prepare the dough by blending the flour, salt, baking powder, paprika, and cayenne - blend with a wire whisk.
2. Add the olive oil and 2/3 cup of water - add up to 3/4 cups of water if dough is still too dry.
3. Knead briefly by folding dough toward you and then pushing it down and away from you (say 5 to 10 times)
4. Roll out either using a rolling pin, or stretch it out into shape with your hands.
5. Top first with a brushing of olive oil - then the pesto if you are using.
6. Take the tomatoes out of the can and get rid of as much juice as possible (shakeem a bit) then Mush them in your hand and spread onto the dough (2 to 4 tomatoes at most).
7. Season with herbs, olives, sundried tomaotes, onion and chilies
8. Bake at 400 degrees Faren. for 12 to 15 minutes (until dough is golden brown)
Enjoy with soup and salad.
Serves: 4

I'm not sure if I did something wrong, or if the ingredients need to be adjusted, but the dough was inedible - tasted like play dough! Please help!

I don't understand! The quantities are all correct and I make this all the time. Did the dough puff up? If not, add a bit more baking powder(1/2 tsp more). The other alternative is a yeast dough using a quick rise yeast. The dough will taste more like a biscuit dough as its not a yeast dough.

I loved this vegan bread. My dough was looking too dry, so I added more water than the recipe said. I didn't add the tomatoes-that is prolly why, but it turned out great. Thank you.

i make this *all* the time. its a common request and its so easy to whip up and alter. i roast some garlic in the oven and put it in olive oil for dipping the bread and its really good.

i just finishe'd making this bread... and though i didn't quite follow the recipe it turned out awesome. I changed up all the spices to fit what i had in the cupboard, and what just sounded good together, ha ha. I used chili powder, cajun seasoning (not very spicy), and some cumin in the flour mixture. Then on top i chopped up some dun dried tomato (mine came packed in oil so i used that oil to brush on the top since it was already flavor infused) i then chopped up some garlic (i don't like is smushed) and some olives then put some slices of red onion on top. to top it off i sprinkled a little thyme. I admit, i went ingredient crazy... but that's what happens when you cook at midnight! and it turned out super yummy! a perfect side to my leftover soup!
