Cherry Muffins

Ingredients (use vegan versions):

    oatmeal (to make oat flour)
    1 teaspoon baking soda
    1 teaspoon salt
    cherries
    applejuice
    1 or 2 tablespoon oil

Directions:

Make oat flour out of oatmeal by running it in a food processor for a minute.  Add a teaspoon of baking soda and salt to oat flour and mix again.

In a bowl, mix apple juice with the oat flour to make a spoonable batter the consistency of thick sour creme.  Add a tablespoon or two of bland cooking oil and mix.  Stir in the cherries.

Spoon muffin batter into an oiled muffin tin.  Bake 350 until a tooth pick comes out clean, about 40 min for big muffins.

Yes, they really work.  They hold together without the use of eggs or wheat flour.  The apple juice makes them sweet enough.  Awesome breakfast with a soy milk cuppacino.

Can you give us some idea about how much oats and juice and things like that?  I would like to make these, but I don't want to waste ingredients.  Cheers

This sounds really good, which is why I was attracted to the recipe in the first place--but at the end: mange, mange, you're too thin! cracks me up--because mange is what some unfortunate dogs have.  Eat, in Italian is mangia.  Well, I thought it was kind of cute anyway...

I also like the sound of this recipe, but its incredibly vague.  How much flour?  How many cherries?  If someone could adjust the recipe to let us know the measurements, I'd appreciate it!  I'd love to try this.

I would guess 1.5-2 cups oatflour for the amount of salt and baking soda noted, adding juice until it is muffin battery and adding the amount of cherries you want.

Okay, I'm going to try to give some advice with this recipe.  I used 1.5 cups of whole wheat flour, 1/4 cup or so of tart cherries halved, 1/4 cup of sugar, 1/4 cup veg oil, and 1- 1 1/4 cup of soymilk.  Everything else I made like the recipe.  I was out of apple juice.  I think they weren't sweet enough for my taste.  I would add another 1/8-1/4 cup of sugar. I would also only add 1/2 teaspoon of salt because they were a little on the salty side. This recipe only made about 9 normal sized muffins.  I baked them on 350 for about 30 minutes and they were perfectly done.  I hope that helps it out a little.

I loved these - they're heavenly. And, when you bake them, they make the house smell like cherry cobbler!

But, most of all, I like that they are so healthy - they are oatmeal, juice, and fruit - with a little leavening added - nothing unhealthy in there. They're whole grain and have no added sweeteners. While most muffins are good for dessert or an occasional treat, these are a good breakfast-replacement-on-the-go. I hope to use these just that way, and avoid those overpriced bars at the grocery that usually have animal-source glycerine (a soap-making byproduct Tongue)

This is how I tweaked the recipe. The first time I made it, it was too salty and not sweet enough for my taste, but I didn't want to add processed sugars, I liked the fruit-juice-sweetened idea.

So, I blended
2 c oats (after blending it was just a little over 1 1/2 cups)
and added
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup frozen sweet cherries, thawed and cut in pieces
Thawed Apple juice concentrate, a little less than a cup, to make the batter the right consistence (add this last, and fill cups and bake right away)
Then, I filled 6 paper lined muffin cups and baked it at 350 degrees for 30 minutes
(I left out the oil and didn't miss it)

They're just perfect - and perfectly healthy

I'm hoping to try other fruit and nuts in place of the cherries - blueberries, raisins, dates, walnuts - etc. I think this recipe has a lot of potential!

I gave this one a good try. I was really excited about it, but alas, it failed. The batter took on the consistancy of cement, and it didn't have much taste. My son was afraid to try them. I managed to eat them, spread with vegan butter and ate them with hot tea. I don't know how to improve this recipe, so take any advice you can get from the others who actually had success and liked them. Thanks for the try though! I'm always up for new recipes. You win some, you burn some!
