1 cup flour (preferably whole-grain; rice, oat, spelt and other alternative flours work
just dandy)
1.25 cup liquid (soy milk, rice milk, water, fruit juice)
.25 cup oil
.33 cup maple syrup or other liquid sweetener (adjust to taste)
1 tablespoon baking powder
.5 cup each (or more, i like MUCH more) of your favourite fruits or nuts
Directions:Mix oat bran, liquid, oil and sweetner. Let sit for a couple minutes, then sift in flour and baking powder. When thouroughly mixed, add fruit/nuts. Spoon into a 12- muffin tin and bake at 400F for 22 minutes.
Once you've made the recipe a couple times and have the consistency of the batter down, try substituting things like applesauce, cooked pumpkin or mashed bananas for all or part of the liquid, and adding spices like cinnamon (goes well with blueberry muffins, or pumpkin, or apple), cloves or allspice. These muffins have only failed me when I forgot to add the baking powder, and even then they tasted OK.
HINT: this recipe doubles, trebles or quadruples well.
These muffins tasted good, but when I used paper muffin liners half the muffin ended up sticking to the paper. Also I had to bake the muffins for an extra 5 minutes because they weren't quite baked through.

I add 1/2 cup of whole flax seed to increase the fiber and it really adds texture.

I've made these a couple times now. I used fruit juice instead of oil the second time. Worked great both ways - good recipe!

I also had to bake them for longer.. but other than that, they're wonderful. I added blueberries and cranberries and I will definately be making another batch soon.

I've made these with all kinds of variations, and they haven't failed me yet. My favorite is with dried cherries, a little cherry extract, and almonds.

yeah, these were tasty, although they're definitely more of a nutritious snack than a sweet treat. I put in golden raisins, dried cherries, sunflower seeds, and mashed banana. my boything liked them fine.

This were tasty as all hell but they turned out a little dry. Did I do something wrong? Help me out please.

A great base muffin. I like to make them with amasake and applesauce (instead of the oil).
