Bread Machine Oatmeal Bread

Ingredients (use vegan versions):

    1 Cup Warm Water
    2 tablespoon Canola Oil
    2 tablespoon Sweetner (Sugar,Sucan't,Maple Syrup, what ever you use)
    1 teaspoon Lemon Juice
    1 teaspoon Salt
    1 Cup Oatmeal
    2 Cups Flour (either all white, 1/2 white 1/2 wheat, or other combo of choice)
    2 teaspoon yeast

Directions:

Toss it all together in your vegan bread maching per your machines instructions and press the appropriate cycle. You will have wonderful vegan bread to enjoy. First time I tried this the crust was too dark for my preference so now I use the lighter crust setting.

Serves: 1# to 1 1/2#s

Preparation time: 5 Minutes Plus Machines time


I tried this Oatmeal Bread, and it came out hard as a rock.  Sad, too, because it smelled so good.  One question- I'm guessing it makes a difference if you use quick oats vs. non-quick; which is preferred?

Mine came out hard as a rock too.  It was very hard and shaped like a brick. No one in my family liked it, and it is the first bread machine recipie they wouldn't eat.  I followed the recipie exactly, so it may have been the type of oats.

I use the light crust setting as recommended, and upped the yeast to 2 1/2 tsp.  Doing that, its still a very crusty, chewy vegan bread, but not rock-like.  I have had a lot of luck adding dried fruit to this.

Hi, I've not tried this recipe yet, but at first glance it seems to have way too little water. Try this: use the recommeded amount of water then, after 10 minutes mixing, interrupt the mix cycle to check on it. If there's any unmixed flour, scrape it into the main mass with a spatula, then add water 1 tablespoon at a time until you have a uniform, soft, slightly sticky ball of dough (at a guess I'd think it would take maybe 3 or 4 more tablespoons, i.e., 45ml).  Be sure to use fine oatmeal ( aka oat flour) Good luck!

Sorry, almost forgot this. Adding a teaspoon of gluten powder will help the rise too.

This recipe is absolutely delicious!  All you have to do is add another 1/4 - 1/2 cup water, another 1/2 teaspoon yeast, and set your machine to a lighter crust.

Love this recipe--I add a half cup more water and a little more yeast, and then dried cranberries.  My boyfriend and I have been eating it for breakfast for the last two weeks, it's delicious!

This worked so well. It produced a nice tall, light loaf. I added 1/2 cup more water. For flour I used whole wheat bread flour plus 1 tbsp. vital wheat gluten. I coarsely ground my oats. The only issue was that it rose just an inch to much and grazed the lid. I did add 2 1/2 tsp. traditional yeast, so maybe all I needed was the 2 it called for. This is definitely going to be made more in my kitchen.

I used oatmeal that I ground myself into a coarse flour. I think using quick oats would work too, though.

I make this all the time now. It is good with a handful of sunflower seeds. I've used brown rice syrup, molasses, agave nectar and dehydrated cane sugar, all with good results. I always use whole wheat flour. I only used bread flour the first time and don't see a difference. What a wonderful recipe. So light and moist, yet whole grain. Yum!

I used 1 1/4 cup water based on other reviews & I think this was a mistake. I also used a cup of this "hot cereal medley" I had instead of oatmeal. It was mostly oatmeal, but also had flax, sunflower seeds & bran I think. I also threw in a handful of walnuts. The flavor of the bread was excellent, but it didnt really rise, it was concave & very moist. Next time I'll try just a cup of water. The difference may be that i used oatmeal whereas I think the reviewers that said it needed more water may have been using oat flour?

I've had good luck with this recipe... just add another 1/2 tsp of yeast and check the water during the mix.

I add flax seeds, sunflower seeds, pumpkin seeds and sesame seeds to it with success. Have also enjoyed adding sundried tomatoes.

This bread came out really well for me, but with some changes to the recipe. I added 1/4 c. more of water... which I think was too much extra because I needed to add a lot more flour to get the right consistency. I used quick cooking oats and put them through the food processor first. Also, during the second knead, I added a handful (I have tiny hands) of finely chopped toasted pecans and a handful of a 5 oat "hot cereal" + flax seed. Soft and nutty- I use it for sandwhiches all the time  Smiley

New to vegan, about 4 weeks. Have missed my bread so I tried this recipe it was very, very good, 2&half tsp on yeast and a little over 1 cup of water.Crunchy crust and soft tasty middle. Thankyou so much.
