Recipe submitted by Debbie Jih

Fat-free Orange Poppy Seed Bread

Ingredients (use vegan versions):

    2 cup Wheat flour
    1/2 cup vegan sugar
    1 tablespoon baking soda
    1 tablespoon poppy seed
    1 tablespoon vanilla
    1 cup orange juice

Directions:

Preheat oven to 325 degrees.  In a mixing bowl, add flour, vegan sugar, baking soda and poppy seeds and mix.  Add vanilla and orange juice and mix just until you don't see any dry flour.  Spray cooking oil on a bread pan and pour mixture into pan.  Bake for 45 min or until done.

Serves: 10

Preparation time: 1 hr

The orange poppy vegan bread is good.  But, IT IS VERY HEAVY.  It is best served right form the oven and does not keep well.

I find that if you mix unbleached flour with 1/2 cup of wheat flour it has good results. Whole wheat flour flour by its self is always heavy.

The first time I made this bread I made it the way the recipe stated but I used whole wheat pastry flour and  the bread had a bitter aftertaste.  Then I made a second loaf and used 1C. whole wheat pastry flour and 1C unbleached white flour and doubled the sugar to get rid of the bitter aftertaste and it was better but still not very good.

I used 1/2 c oat flour, and the rest white because I was afraid of the problems that the other posters experienced. But I think the bitterness came from the baking soda. I suggest using less than half of what the recipe suggests. and doubling the sugar.

Well I think it is supposed to be more of a bread than a cake. It shouldn't be overly sweet or tart.
