Healthiest Muffin Recipe

Ingredients (use vegan versions):

    1 ripe, banana, mashed
    1 cup grated zucchini
    1/3 cup applesauce
    1 cup rice or soy milk
    1/4 cup maple syrup
    1/2 cup dates or raisins
    2 cups spelt flour
    1 cup ground flax seed
    1/2 teaspoon baking soda
    2 teaspoon baking powder
    2 teaspoon cinnamon
    1 teaspoon allspice
    1/2 cup chopped walnuts (optional)

Directions:

Combine dry ingredients in a large bowl. Combine wet ingredients in separate bowl. Add wet to dry and mix to combine. Add nuts if using.  Grease muffin tins and fill 3/4 full. Bake @ 375 for 15 min.  Enjoy!

Serves: 12 med muffins

Preparation time: 15 min + cook time

i thought that i had zucchinis but i didn't!  so i improvised and used a cup of shredded carrot instead.  delish!  any sweeter and it'd be carrot cake, but it's nice and muffiny!  yum.

Okay, upon deciding to make this recipe I found I didn't have ground flax, or banana, so i just halved the recipe and decided to leave those out. Bad idea. Because they didn't get done on the bottom at all. i had to flip them over in the muffin tin and rebake them just so the bottom wouldn't be goo. I thought using oatmeal and flour would hold them together, but that also didn't work. I am not going to rate this recipe because I really didn't follow it once I found out what I had on hand... I will try it as soon as I get some ground flax though...

Very good muffins, I made these, although they came out a little weird I think I'm to blame. I added a little orange juice to give it a little fruity taste. Just make sure to crumble the walnuts really small.

These were only OK.  I think they needed just a touch more sweetness, like more sugar added to the raw batter.

Okay si I made these and they turnd ont so bad!!! Cry I did not have any Flax seed so I jsut did not out that in. Everything else was the same. They turned out really soft and goowy. I would have loved that but once I bit into it it tasted really bad and jsut not sweet at all. What does Flax seed do? Is it a oil replacer or something?
