Almond Milk

Ingredients (use vegan versions):

    1 cup blanched, slivered or chopped almonds
    4 cups water
    1 teaspoon vanilla
    maple syrup to taste

Directions:

Put almonnds and half of the water in the blender.  Blend for a good three to five minutes.  With the blender still on, add the rest of the water a little at a time, then the vanilla and syrup.  Blend another 2 minutes.  Line a collander with a cheese cloth (you can get it at a cooking store, food co-op, or even a fabric store), and pour the milk through it.  Squeeze the excess out of the almond gook in the cloth.

The gook left in the cloth makes a great facial scrub, or you can knead vegan sugar, color , and flavor into it and treat it like candy.

Serves: 2-4

Preparation time: 15 minute

Nutrition Information: This is great for vegans! And if you can find a good source for almonds its cheaper than edensoy. . .

I wish I had read this sooner.  I threw my leftover gook out.  I could've used a good facial today.  The almonds would make a fine facial scrub and the natural oil would be beneficial in my cold, dry climate.  Thanks for the idea!

Thank you for this recipe.  I would like to add that I believe one would want to use raw almonds in making milk.  And if you can get them organically grown, that's even better.  Also, by not using chlorinated tap water, and using instead filtered or distilled water, the flavor and the quality of the milk would be much improved.  Again thank you!   Garret

Cheaper than soy milk? Not likely. Yea, if you can find a good source of almonds. But there is no sourece that good. Almonds are commonly over $6 per pound in supermarkets. That means if you live in a large city you may be able to pick up 50 pound bags (which you may have to refrigerate) at about 2/3 that price per pound. If you live far from an international almond distributor -- wait to you see the shipping costs for $50 pounds of almonds.  Take a look at Walnut Acres on-line catalog fro prices and shipping for almonds.

Who ever said it was cheaper than soy milk?  I have a friend who is alergic to soy anyway, and prefers this as an alternative.

When cost is a factor and you have a small yard...  My husband is also allergic to soy and this is less expensive than soy for me...I have two hardy almond trees in my yard.  They grow in most areas.  I moved to the Blue Ridge Mountains in VA from NJ and found the weather is about the same (except it actually gets colder here at night).  The trees have faired well so far.

It sure is cheaper around here(central NY)a pound of almonds is $5.00 and makes three quarts for us..both soy and rice milk is 1.99 a quart.

well. almond milk is delicious! although almonds are a bit expensive, you can get some good quality almonds (okay they aren't organic) at Trader Joes for 3.69! you can't beat that!

I just wanted to say that I used the left over almond stuff for a facial scrub (I mixed it with a little ground oatmeal) and overnight my skin is 10 times better.  Theodore, I live in San Francisco and I get my almonds for 3.50 a pound (a pound makes a TON of milk, I only use about 3 tbsp per 8 oz), they weren't even much more then that when I lived in the suburbs, man where do you live?

Hello, Just wanted to add (for those a bit new to the vegan thing) that there are sevral great vegan calcium sources out there! Many of them don't even cost much: Dried figs, sesame seeds, tahini (which is like PB but more bitter and made w/sesame seeds), white beans/pulses, almonds, almond milk/butter, swede, parsley, broccoli, and green leafy veggies. Of course, calcium-set tofu (check labels, most are) and soy/rice milks & yogurts & ice creams are just as great, but a bit more pricey. Tescos makes great tasting soya milk sweetened with apple juice concentrate for 69p a liter if you're in the UK. Smiley

Gotta try this, I LOVE almond milk but have only bought it in the store. Infact, the chocolate almond milk tastes soooo much better than the dairy chocolate milk when I used to drink dairy.

I cook in a vegan kitchen at a school in Norway and we have almond milk nearly every morning. My students love it! I usually make a it a bit differently. For one I use blanched almonds and roast them for a nicer taste (very creamy!). We can't get affordable maple syrup here but I use 2 tablespoons of vanilla sugar and a pinch of salt instead. As for the almond pulp, I usually use it in waffle or pancake batter for instance. Very tasty! Another nice variaton is to add coconut in the blender!

EBSCook, the salt really improves the taste. I don't have an oven, so I can't roast them but so far, with your tips its exellent!  I can't add syrup or sugar as I'm on a sugar-free diet. Stevia is the solution for anyone like me, but if you're in Europe (stevia is banned at the moment, so they told me) try xylitol (birch tree sugar). I'm using a brand called Bjørke Søt which is exellent.  And with the almond gook, not only a facial mask but you can put it in oatmeal, add color, sugar and coat cookies or cakes with it, and make marzipan.  Love the recipe! Thanks for sharing!

why this recipe was just beautiful, I have never tried to make non dairy milk myself before, but oh will I now? yes! I found it very rich which was great for brekkie etc but for drinking it I added some cold water cause it was fairly heavy. I also did what ESPcook suggested and added some salt and 2 tbs vanilla sugar cause didn't have maply syrup at home. Thanks!

Very easy and great alternative to buying milk at a store.  I have not tried it with Maple syrup (yet) but use molasses which make it taste similar to choclate milk to me.  Also occasionally I throw in coffee for an almond coffee drink.

i like to use the leftover almond pulp to make an almond spread with sun dried tomatoes, basil, salt & pepper, olive oil & balsamic vinegar.

I soak the almonds for at least 4 hours in filtered water.  Pour out the filtered water and then make the recipe.  Instead of adding syrup,  I use a banana or fruit to sweeten to taste if you are wanting to avoid sugar....drink unsweetened.  It has a wonderful taste to it.
