Old fashioned lemonaide

Ingredients (use vegan versions):

    8 big lemons
    1¾ cup granulated sugar
    1¾ cup of water
    1 dash of salt

Directions:

Chop finely the zest of two lemons.  In a small saucepan, combine zest, water, vegan sugar and salt.  Bring to boil, stirring from time to time.  Let it boil for 5 minutes.  Take off the heat, and let it cool completely.  Squeeze the juice of the 8 lemons (about 1¾ cup of juice) and mix it with the cooled syrup.  Keep the mixture in the refrigerator in a glass container.  For lemonaide, mix ¼ cup of syrup with ¾ cup of cold water or Perrier.

Serves: 14

Preparation time: 10 minutes


this recipe is delicious and makes SO MUCH. it tastes like mall lemonade! i will never buy lemonade again.

salt can actually cut the sourness of citrus (it has something to do with an enzyme?) and make it sweeter. Someone just told me this trick for making fresh pineapple less tart.
