Creamy, Rich, Hot Cocoa

Ingredients (use vegan versions):

    1/2 cup unsweetened baking cocoa
    1/2 cup vegan sugar (turbinado sugar, sucanat, raw sugar, etc)
    1/2 cup water
    1/4 tsp. salt
    4 cups soy milk or rice milk
    3/4 tsp. vanilla extract

Directions:

Put cocoa, vegan sugar, water, and salt in a medium saucepan over medium heat. Stir until dissolved about 3 minutes. Add soy milk or rice milk and stir constantly until piping hot about 3-5 minutes. Add vanilla extract. Serve in coffee mugs. Great with a shake of ground cinnamon and/or a vegan non-dairy whipped topping.  Makes five 8-oz servings.

Serves: 5

Preparation time: 10 minutes


This is absolutely delicious!  Rich and smooth and just right.  I love my hot cocoa in the morning on cold winter days.  Thanks tearhsong2 for your recipe.

I make something similar to this but my recipe serves one. In a mug, I put one teaspoon cocoa powder, 2 teaspoons of sugar, a pinch of cinnamon, and a squirt of chocolate syrup. I stir it until smooth, then add a little soymilk and stir until smooth again...Its important to stir it to a smooth paste first so there aren't lumps. Then I fill the mug with soymilk and microwave until hot Smiley If you hate microwaves, it works on the stove top, just be sure to stir often.

for a smaller serving but still a great recipe, try the piping hot cocoa one! it makes about a cup worth.

It's still cold and snowy in Maine, and this hot cocoa totally hit the spot today when I got home from work =D

I really liked the addition of a sprinkle of cinnamon.  I've never done that before, and now I'm hooked for life!

This is so delicious and has gotten many accolades from my non-vegan friends.  It's one of those recipes that really makes 'em think twice!  I find it works better with soy or almond milk, making the drink more thick and rich.  For a single, but generous serving decrease the measurements by a fourth (divide all measurements by a 4).   This drink is more than highly recommended; it's a must!

This was really good.  I used raw sugar, rice milk, added a touch of mint, and did it all in my VitaMix. As you can see from the photo above, it was a hit with the kids!!
