Tofu Scramble (Spinach, Avocado, Cheese)

Ingredients (use vegan versions):

    4 oz tofu (regular, extra firm)
    2-3 dashes ground turmeric
    1/4 cup fresh spinach
    1/2 ripe avocado
    small handful shredded soy cheese
    dash black pepper
    1 teaspoon olive oil

Directions:

Crumble tofu and sauté with spinach and olive oil, until spinach is limp.  Add turmeric until nice bright yellow color (careful not to add too much).

Continue cooking over medium heat 1-2 minutes. stir in chopped avocado, and top with grated soy vegan cheese, and pepper to taste.

I add tomatoes sometimes, basically you can put whatever vegetables you want in it as long as you have the right amount of turmeric it will taste delicious.

Serves: 2

Preparation time: 10 min

This was incredible.  I used frozen spinach (sorry, it is cheeper) and a 1/2 of an avocado.  I loved this.  All it is is salt, pepper, and tumaric.  That tumaric spice is wierd, but it tastes good.

I thought turmaric didn't taste of very much, that it just makes things yellow. Or?  Huh

yum. i added some onions and adobo spice and ate it with ketchup, just how i like my eggs and it was great.

This recipe was so simple yet it had a lot of flavor. I never would have thought to add avacado but it suprised me and turned out excellent. I also ate it with ketchup and added fresh tomatoes like you suggested. Got to get those extra servings of fruits and veggies!  Wink

i love doing this as directed, but this morning i jazzed it up and left out the cheese but added:
-a cut up smart hot dog
-2 tbl.spns. sunflower seeds
-1 small potato
-a greek seasoning....?
-mustard seed
-1tsp. flax oil

random assortment of ingrediants but.... sooooooo good.

i changed it AGAIN! no avocado.... i added corn  and wayyy more spinach, seasonings and some mushrooms, served over toast. will post picture. i love breakfast.

This was surprisingly bland to me....I didn't have any cheese, but I added some parm....we had to add a ton of hot sauce - I tried the ketchup thing, but I preferred the hot sauce.....its so weird because I love all of the ingredients seperately....it just didn't work for me.
