French Toast (with bananas)Ingredients (use vegan versions): 3 cups sliced bananas (about 2 large)
2/3-1 cup soy milk
1 1/2 teaspoons cinnamon
3/4 teaspoon vanilla
12 slices bread
oil for cooking in
maple syrup
Directions:Blend together bananas, soymilk, cinnamon, and vanilla. Pour into a pie plate, dip slices of vegan bread into batter. Fry in a non-stick skillet until slightly golden, be sure to use plenty of oil or else it will stick to the pan (ugh!)
Serve with maple syrup
Serves: 6

MMmmmmm! My first batch was soggy, too, so I had to let it cook for quite a while. My second batch was better: rather than dip the vegan bread into the batter, I spooned it on and spread it around. Less batter less mess. Yummy!

This is a good recipe. The only thing that I would suggest to add is 1 or 2 tablespoons of whole wheat flour and a pinch or two of ground nutmeg. That should make it just right. A great alternative to the standard egg and milk version. I think it tastes even better, personally.

This was pretty soggy. I tried a lot of different things to fix the sog, but nothing worked. I even tried toasting the vegan bread first.

to get rid of the sog try blending all the ingredients in a blender to make sure the banana is well mashed... and also try using a thick, hearty vegan bread (I notice that white bread never works with my vegan french toast recipes) also, you may try brushing on the mixture instead of dipping it.

wow! =)Yumski! I blended the soy milk (vanilla)with the cinnamon and vanilla extract,and the banana in my blender, so it mixed well. I also used Pam no stick cooking spray(no fat =)i had to flip them alot more so it didn't burn but, it tasted great!Like banana vegan bread!Next time, i won't let the bread soak in the mix so long.

This was good. I did add some flour to the mix. If you don't like bananas, you could try grating an apple instaead and lessening a bit of the milk.

ok, my love for french toast, pushe'd me to keep trying this recipe until i got it right. and i think i did. i took 2 very ripe bananas, 2 TBSP of flour, 1 tsp. of baking powder, vanilla, cinnamon, nutmeg, and put them in the food processor. slowly added only just enough soymilk to blend smooth. and the trick to eliminating the soggy vegan bread is to use very dense whole grain/nut bread. i brushe'd the mixture onto the bread with a pastry brush. use plenty of oil on the griddle, and turn the heat down. the banana mixture needs more time than regular french toast to set up. and if the heat is too high, it will burn before it has time to cook. it turned out perfect. my daughter loves it. You do have to keep in mind that it is not going to be the exact same as egg french toast.

Here in Seattle there is a Vegan Resturant that makes Sesame Tahini French Toast which is fantastic! Unfortunately I don't know the recipe for the batter but I believe it is a mixture of some Sesame Tahini, Soy Milk, sweetener and vanilla extract ( a pinch of cinnamon probably wouldn't hurt). The Resturant is called the Daily Planet. Perhaps you could call or email them and they may be willing to give you the exact recipe. (I wouldn't mind having it myself). Hope this helps! Susan

To SusanInSeattle & Barbara--Theres another French toast recipe on this site called French Toast (sans Bananas) that uses tahini and sounds just like what you're looking for. I've made it several times and it beats the pants off any other French toast recipes I've tried--extremely tasty!! You should definitely give it a try!

I didn't really think this recipe would be any good. Yet the idea of using banana instead of the milk & eggs thing stuck in my head. The other day I tired this with a couple of too ripe banans and even my vegetarian husband thought they were really good!

ok, ive had this work twice now. i used toasted stale bread 2 bananas 2 tbs wheat flour 1 tsp baking powder dash cinn, nutmeg 1/4 tsp vanilla only ehough soy to make a very thick creamy batter i blended in a food processor, used a very nonstick pan with enough oil spray to coat i cooked each side on med low for 6 minutes, and then on med for about 3 more minutes per side until golden brown. i used the remaining batter for crepes because i made too much. i hope this helps.

i just made this, and it was pretty good despite me not having any maple syrup. i halved the recipie and used 3 slices of bread, so mine was soggy too (note to self - actually read the recipie before making, don't rely on memory) i toasted 2 of the slices of bread, but the one slice i didn't came out better. im definatly trying again. I think this can be an excellent recipie, it just takes practice.
