Oatmeal Cinnamon Bars

Ingredients (use vegan versions):

    2 cups oatmeal
    1/2 cup margarine (softened)
    3/4 cup brown sugar
    1/4 teaspoon baking soda
    1/2 teaspoon cinnamon
    1/2 cup raisins
    1/4 cup chopped pecans (or walnuts)
    2 tablespoon liquid sweetener

Directions:

Mix oatmeal, vegan sugar, baking soda, cinnamon, raisins, pecans and sweetener. Add softened vegan margarine and mix thoroughly to form a nice mushy mass. Place mixture in a 9 square pan and pat down firmly to flatten the surface. Bake in a preheated oven at 350 F, for about 20 to 25 minutes. Remove from oven and cool a little. Cut into bars and let cool completely.

Note: you can make these into chocolate cinnamon bars by adding 1/4 cup of unsweetened cocoa powder.

Serves: 20

Preparation time: 30 min


When I made it the mixture didn't stick together, but the flavor was amazing.  I added a little dark corn syrup, but it still didn't make bars.  But good anyway.

I made these as the recipe said and they came out great.  They do need to cool completely to get hard and stick together.  Then I cut with a pizza wheel.  They are soooo good!  I might try them with carob chips next time instead of raisins.  I used honey for the liquid sweetner.  Smiley

So good! Simple ingredients and simply delish. I didn't have any walnuts though so I used chocolate chips instead. Came out great!

I was looking for a basic recipe that I could add ingredients to and this is it! The bars are awesome. I added pumpkin seeds, shredded coconut, walnuts and I used agave for the sweetener. I added a little more margarine and sweetener to moisten the mix. This one's a keeper!
