Pumpkin Oatmeal

Ingredients (use vegan versions):

    1/2 cup oatmeal
    1/2 cup canned pumpkin

Directions:

Cook oatmeal using water or milk. Stir in 1/2 cup canned pumpkin and use sweetener if desired.

Serves: 1

Preparation time: 2 minutes

I liked this one.  However, I mod-ed it a lot. I used pumpkin pie filling and added in my usual oatmeal stuff: flax seeds, wheat germ, and walnuts and some soymilk to make it creamier.  I added some brown sugar and it was almost too sweet.  If you are using mix, you probably don't need any extra sweetener.  I ate it with some green apples which created a nice contrast to the sweetness.

this is one of my favorite fall breakfasts! i have had it for the past few days, due to  the leftover puree. i cook my rolled oats in vanilla soy milk. then top with pumpkin puree, cinnamon, nutmeg, pumpkin pie spice, and maple syrup. i also have added half of a mashed banana after the oats have cooked, which is also delicious.

This is without a doubt the best oatmeal I have ever had.  I used canned pumpkin and added cinnamon, nutmeg, allspice, maple syrup, and pecans.

It was delicious! I used vanilla soy milk and added cinnamon. After reading the reviews, I'll be trying some of the modifications as well.  That's what's great about the reivews, lots of ideas out there that I wouldn't have thought of; vegan since May.  Thanks!

I made our regular oatmeal, added about 1/2 can pumpkin, some nutmeg, allspice, cinnamon, ground ginger, salt, and brown sugar...and I didn't add enough sugar, and too much pumpkin. I liked the pumpkin flavor..but it was a bit much. It was nice to try, though.

I REALLY liked this. I just did 2 1/2 tbs of pumpkin pie filling and mixed it really well with a 1/2cup of oatmeal. Then about a 1 tbl of cinnamen, nutmeg, pumpkin pie spice, brown sugar. Then about 1/4 cup unsweeted soymilk and again mixed well. I didi all this the night befor and just put it in the frig. OMG SOOO YUMMY! =D

I bet it would be really good just heating it up aswell after leting it sit over night too. Wink

So good!! I made the oatmeal w/almond milk, good sprinkle of cinnamon, dash of salt, stirred in the pumpkin during the last few minutes of cooking, added flax meal, maple syrup and a small handful of broken walnuts...YUM!

MMM This was so good and I'm just starting to get into oatmeal again...Made my oats with vanilla soymilk and added liberal amts of cinnamon, nutmeg, allspice, ground ginger, and brown suger. The pumpkin gives it a really nice "mouth feel", so creamy and delicious Smitten

I used steel cut oats. They have such a good crunchy consistency.  The pumpkin made it creamy, which was a nice change.

This was great! I used some cinnamon, nutmeg and about 1/2 tps brown sugar along with the canned pumpkin and oats. I also sprinkled some raisons in there! Thanks!
