Roasted Breakfast Potatoes

Ingredients (use vegan versions):

    baker potatoes
    garlic powder
    onion powder
    paprika
    dried parsley
    black pepper
    white pepper
    oil (flavored works great!)

Directions:

The amounts for this recipe very with taste and serving size, feel free to add more or less.

Preheat oven to 450 degrees F. Chop potatoes into small chunks, put in bowl. Add spices and oil (I use lemon or jalapeno flavored olive oils) and mix well. Spread on a baking sheet and throw in the oven.

It usually takes 20 minutes for them to brown, but check them often. They can get wonderfully crispy and are a delightful breakfast- my non-vegan boyfriend loves them and sometimes we put fresh salsa on top when they're done.

Serves: depends on amount of potatoes

Preparation time: 20 min


Thanks for this recipe! I made it yesterday morning and it was delish, especially with salsa and vegan sour cream on top. I always fry potatoes, and I never even thought to roast them instead, but they were so much tastier! Thank you!

This is great, I've made it twice already!  I tried adding cayenne pepper, which would have been tasty but I added a little too much, heh.

I replaced the onion powder with half a large onion, chopped, (for about 5 cups of potatoes) and it was fantastic!  The onion got so sweet from the roasting and complemented the potatoes so well.  I also added some rosemary and a little bit of thyme.  Great on its own but also yummy with a bit of mustard.

Heres how I changed it around a bit.  To the chopped potatoes I added 2 sliced carrots, 1 large coarsley chopped onion, 1 bell pepper chopped, minced garlic, olive oil, Tonys seasoning - I'm from Louisiana - and put it in oven at 450 and stirred a few times.  Leaving a total cooking time of about 45 minutes till there were crisp pieces and   it was superb!

Fantastic! I added chopped onion and green bell pepper, used plain canola oil, and had garlic powder, salt, pepper, paprika, cayenne, and turmeric as my spices. I think it took much longer than 20 minutes but it was well worth the wait!

They are delicious! And so easy.  The great thing about this is that you don't have to stand over a frying pan looking after them.  You can just stick them in the oven and prepare the other parts of your meal.
My only modifications were to add some Jane's Crazy Mixed Up Salt and bake them about 5 minutes longer, because I like my potatoes well browned.  I'm not sure why they took a lot longer for other people.  Maybe they cut them into bigger chunks?  Mine were about 3/4 in. cubes.
