Moms Saturday Morning PancakesIngredients (use vegan versions): 1 cup flour
2 tablespoon sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg substitute (I use 1 1/2 teaspoon EnerG egg substitute + 2 tablespoon water)
1 1/4 cup soy milk
1 1/2 tablespoon oil
Directions:Heat electric griddle to 350 degrees F. Mix all ingredients together. Cook pancakes until bubbly and they have a slightly dry appearance--then flip and cook until done. Enjoy.
This is a modification of my mothers pancakes that she used to make every Saturday morning. She also made a very simple sugar syrup using 1 part water to 2 parts sugar, heated until sugar is dissolved and then she would add a dab of vanilla extract.

Wow! This is for sure the best vegan pancake recipe that my husband and I have come across! Infact, it is going in my recipe book as a definite keeper. . . I was so happy to finally have some vegan pancakes that really taste like pancakes!

Fantastic!! I used a cup of vanilla soy milk and 1/4 cup of regular, because I had more vanilla, but it gave them a nice flavor. Either way, this is a perfect pancake recipe. Thank you!

This is a great recipe. I used a cup of regular soy milk and 1/4 chococolate and they were great! And it only took me 2 minutes to whip up the batter!
