i replaced the ener- egg replacer with flax seed and they came out worse. it took 10 minutes to cook just one. so i think i might just make the regular ones and maybe every once in a while use cage free eggs. my mom told me not to punish myself if i have egg or dairy porduct everyonce in a while.even though thiss makes me mad. i want to find a good vegan crepe recipe! I make this all the time and it's always a hit. Sometimes I'm multi-tasking up some homefries and I totally forget to put in the egg replacer, and you know what--still works! Remind me to focus when I'm cooking the best vegan crepes EVER! I mean yummy.

I failed!  I followed the recipe except I had to use whole wheat pastry flour (all I had).  The crepes would not set, they were soggy, fell apart and tasted terrible.  Did anyone make this successfully with pastry flour?  I can usually sub WW pastry flour without a problem but this was a disaster and I had to throw everything away  Cry  Help!

These were delicious! A bit stiffer and thicker than "real" crepes but definitely did the job and tasted great Cheesy Will make again for sure.
